hmm... the more extreme end of things is my bread and butter, but if you like Mastodon and want to check out the more arty end of heavy metal I recommend:
Isis Neurosis Cult of Luna Intronaut YOB Agalloch Woods of Ypres Baroness
(fair warning they all make use of harsher vocal patterns but if you like Mastodon it's not any more extreme than that)

Not sure if they count, but Steel Panther is a pretty fun band to listen to. Lyrics are pretty damn racy though.

I'll agree with those who said Isis and Baroness. Also,I'd recommend Between The Buried And Me but you may not like the vocals.

Lazarus A.D. is a pretty sweet new thrash metal band. The Sword's a good stoner metal band as well. Speaking of stoner metal, Josh Homme's (the guy from Queens of the Stone Age) first band Kyuss is a great band as well.

I'll try to stay away from some of the harsher stuff I listen to, but here's stuff I dig:
Animals as Leaders: They're an instrumental progressive metal band. I'd also say they'd fall in the category of "djent", but some people don't think that's even a genre, so yeah.
Between the Buried and Me: Okay, so their vocals are harsh and they use lots of blastbeats, but their songwriting is just too damn good to not listen to.
Mastodon: Everyone who has recommended them is correct. Amazing, AMAZING progressive metal band.
Baroness: These guys definitely follow in the footsteps of Black Sabbath. Really sludgy, bluesy riffs and just awesome all around. Except I personally think they're better than Black Sabbath, if only because they lack Ozzy Osbourne, who I can't stand as a vocalist or as a lyricist.
The Faceless: Okay...so they're death metal, but I think you should check them out, regardless. There's a lot of progressive elements to their music, and they're all very impressive, very technical musicians. Plus, their second album is about aliens. Which is awesome.
Dream Theater: I don't like them as much as a lot of people do, but they're a pretty damn fine progressive metal band. I'd personally recommend Metropolis Pt. 2: Scenes From a Memory as a good starting point, but that's mostly just because it was my starting point. But most people would probably say Images and Words is the best place to start off. That's fine and all, but I'm not really big on that album.
The Human Abstract: They're more metalcore than straight metal, but once again, lots of progressive elements to their music that make them very interesting to me. Check out Nocturne or Digital Veil. Midheaven is a mostly skippable album.
ISIS: Definitely second the people that mentioned them. AMAZING atmosphere in all of their albums, particularly Oceanic. Just a tremendous band. Plus, they were a huge influence on Thrice's "Vheissu", which is one of my favorite albums ever, so f*** yeah.
Lamb of God: One of my favorite bands from the New Wave of American Heavy Metal. I wasn't into them for years, but then something suddenly clicked with me for whatever reason. Great songwriters, lots of awesome music to be heard there. Check 'em out.
Periphery: Another band that would fall under the djent category. Lots of heavy, bouncy riffs, and some progressive elements in there (nope, I don't like progressive rock mixing with other genres at all). Spencer is kind of just an okay vocalist, but I can deal with that because the band is otherwise so awesome.
Probot: Oh, just Dave Grohl writing awesome metal with a bunch of legends in the metal scene. No big deal.
Rhapsody of Fire: My personal favorite power metal band, and the band that got me into the genre. I think they've just nailed the genre better than any of the other bands out there. MAJOR CHORDS.
Scale the Summit: Another instrumental progressive metal band. Their most recent album, The Collective, was easily one of the best albums of last year. You owe it to yourself to check these guys out.
Slayer: Slayer.
The Sword: Sort of along the same lines as Baroness. Just awesome stoner/sludge metal. Great, great stuff.
Tool: Absolutely legendary progressive metal band. You have to have heard them at some point. Great musicians, great songwriters, and just outstanding stuff all around.
Wolves in the Throne Room: Okay, they're a black metal band, so they might not be your thing...but they're pretty awesome, and have created a lot of really incredible atmosphere with their music, so you should definitely check them out anyway.

So Tool is metal now? News to me. Some of the genres here are funny. lol It's everyone's own opinion though. I don't know if it has been mentioned or if the op would like them but I don't care, The Acacia Strain. They are awesome!
