Salad dressing. You ever actually take a look at the tubs? There's more than just dressing in them. People drop stuff in there all the time.
Also, taco meat for me. To hell with that. At Corral, I just get a piece of steak, slice it and make fajitas.
Also, any kind of seafood that isn't deep fried. When it's deep fried, you know it's fully cooked. Ain't NOTHING like eating a piece of cod and the center is COLD. Gives me douche chills.

Fish definately. I try to pile a little bit of everything on my plate and try as much as possble.

I agree with non-fried seafood. Unless it's like, shrimp in pasta, it rarely turns out well.
So on that same note, every Chinese buffet here has sushi, and I can never bring myself to try it.
I also don't eat cut fruit at any buffets, just because the prospect of having fruit sitting out already cut at a buffet just doesn't seem right to me.

The only non-fried seafood I seem to eat at a buffet is generally sushi. Love me some Philly Rolls...
In regards to what I don't eat at a buffet, I tend to stay away from the soups. Not a fan to be honest.

THe only thing I've become weary of eating at buffets, that I can think of, is salad bar pudding. It may taste yummy, but like others have said, people are always dropping little bits of various other salad bar foods into it and that texture contrast of smooth, cool pudding and then something crusty or lumpy in it is just gross to me.

I stay away from seafood in general at buffets. Nothing else is really off limits. Just depends on what I'm in the mood for.

I always avoid anything cold at the Chinese Food Buffet, especially the oysters. I just can't trust cold food in situations like that. Althought sushi is an exception.
I also don't usually get the crab legs. Not that I don't like them or don't trust them, but they're just so damn hard to open up and eat.

I tried pork ribs at a buffet once, and they tasted so rancid I lost my appetite and walked out of the restaurant.

Roast beef in gravy. I went to a Shakey's when my brother's softball team had an end-of-season celebration for going undefeated in regular season and tournament play. (I was an honorary member because I was the only guy who left the team when I passed the age limit.) The brown gravy covering green meat. I got sick.
Which is a shame, I normally get it at restaurants.
