To be fair on the Austin/HBK one, it could have been the case of Michaels' back.

Surprised nobody has mentioned HHH/Orton from WM 25. The two should have hit it out the park, but it was easily one of the worst WrestleMania main events ever. Even the crickets were stunned into silence. The spin afterward was "how could anyone follow Shawn-Taker?" -- but in reality they followed Cena vs. Edge vs. Big Show, which got a much better crowd reaction than HHH-Orton and wasn't exactly the hardest act to follow. To WWE's credit, both were pushed way down the card a year later, going on second and fourth.

I wouldn't exactly consider Goldberg a "Great" wrestler, but for what he did he did extremely well.
His match with Lesnar would of been unbearable if not for the crowd. That should of been a big time match and if both were at their best, it should of worked really well. Sadly, this one and only match was not the case at all.

Roddy Piper vs Jerry Lawler at King of the Ring(not sure of the year) Their styles did not mesh well at all and the match was awful. Not what you would expect from two future HOFers.

Eddie Guerrero and Tajiri vs. Charlie Haas and Shelton Benjamin in a ladder match. I was really excited to see what tricks they could pull out for this one, but it ended up being incredibly mediocre with a few botched spots. I think the only thing anyone remembers from that match is Eddie slamming Tajiri through his truck windshield after they lost.

Regal vs Raven.
Dreadful match and something I really wish was a show stealer.

I'd say it was alright, though. Not perfect and I don't recall a lot of it offhand but I've seen worse. Speaking of, the Mania 25 Money in the Bank match. Had guys like Benjamin, Punk, Christian, and Kennedy in there but the end result is probably the worst match of that type (either that or the five-way one from earlier this year) and is just boring as hell. Why do I keep mentioning Punk matches? It's not like I'm doing this on purpose. Though then again he could hardly be blamed for a seven man match sucking anyway.

That was the first one that came to my mind too, I expected it to be the best match on the card but it was really disappointing, I think that was the match you could see Eddie apologising to Benoit afterwards.

Also, HHH/Michaels had a couple of underwhelming matches. They never topped Summerslam '02, not even close.

The Survivor Series 2002 Elimination Chamber and their Hell in a Cell match are good examples of that. They started out great, then they went twenty minutes too long. The two just plain tried too hard.

It's been mentioned before but Lesnar/Goldberg should of been much better than what it was. I don't know if it was the fact that Lesnar and Goldberg were leaving and the crowd breaking the forth wall, or if it was just because these two didn't click (or didn't care).
Honorable mention to Shawn bouncing and flipping like crazy against Hogan at Summerslam. I heard somewhere that it was because there wouldn't be a rematch and Shawn was upset. Whatever the reason, it was horrible to watch, which is a shame because it could have been a great match.

I've seen a lot of praise here for Hogan/HBK, but yeah, I think I would agree with you. Hennig oversold for Hulk too, but Shawn looked like a bad parody of a Hogan opponent.

Eddie vs Benoit at ONS probably was crap because of Guerrero trying to play that stupid heel gimmick too hard when he probably should have just eased up on it that particular night.

Yeah this match is terrible. If I remember right, Lawler was ok, but Piper was a little off. The storyline going in was sorta weak and the finish was built around the Piper impersonator that Lawler had hired turning face....and then vanishing forever. Very weird and confusing. I'm not trying to start trouble, but I never thought any of the Michaels/Angle matches were very good at all. The most obvious case I can think of of two guys going out there and trying to have an epic match instead of just working a storyline and seeing what happens.

Punk vs Jericho at WM this year.
I know they tried but given that this was the match everyone was pointing too as "The Technical showcase" in this years WM, it did kind of drag a lot.
