I love Edge vs Lance Storm from Summerslam 2001. Great technical match up.
Steve Austin vs Bret Hart Survivor Series 96. This match is not as famous as their Wrestlemania matchup but it's a better match.

I haven't actually watched it since I saw it live, but the triple threat main event from Vengeance 2002 was awesome live. The Undertaker vs The Rock vs Kurt Angle. Actually that was a really solid show from top to bottom. Here's the full card.

I'm not even much of a fan of either guy but the Alberto/Ziggler match where Alberto turns evil again by annihilating Ziggler's concussion riddled head is just tremendous.

Couple matches I watched yesterdaY: Shawn Michaels vs. Hunter Hearst Helmsley from an old episode of Raw. Just a fun prototypical New Generation heel vs. face match. Helmsley matches are so weird to watch in hindsight because "The Game" is such an entirely different animal. It's interesting to watch this match knowing the cinematic epics that they would have against each other ten years later. Razor Ramon vs. Goldust for the IC title at the Royal Rumble was a good match. It feels like forever before Razor Ramon cuts through Goldust's homoerotic mind games and it's pretty awesome how effective Goldust was at making you uncomfortable. Watching a guy molesting other men on what was still presented as a kids' show is so unnerving, and Razor sells what a creep Goldust is really well.

I think it's often forgotten that the Montreal Screwjob match, before the finish, is actually f***ing great. It's stiff, brutal, a bit technical and a bit brawly, and it's really underrated as a match.

Cena/Lashley from The Great American Bash 2007. Probably Lashley's best match, and another in a series of really great Cena matches

If anything I strongly recommend the In Your House bluray the WWE put out last year. The host of the video Todd Pentingill put it best that those shows (In Your House) had some great matches that weren't on the grandest of stages and have been forgotten. There are a lot of really good matches on that set and Todd is really good as a host. I'd never heard of the fatal 4 way with Bret/Vader/Austin/Undertaker till that came out. What a damn good match that was.

Daniel Bryan vs Randy Orton from December RAW 2013.
An absolutely dynamic match between the two. THE best match they've ever had with each other.
Savio Vega vs Goldust from April RAW 1996
A great match with a hot crowd.
