There are two documentaries on the "that guy" and "that gal" actors. The first is That Guy... Who Was in That Thing (2012). Xander Berkeley is in that prior to The Walking Dead.
The next is That Gal... Who Was in That Thing (2015). I actually recognized more actors in this one, Paget Brewster, Catherine Hicks (Chuckie), Roxanne Hart(Highlander), Jayne Atkinson(House of Cards). This is free for Amazon Prime users. Both are very interesting.

Miguel Ferrer. He was always 'that guy from Robocop', but was captivating in whatever he showed up in. And he was Hollywood royalty as the son of Jose Ferrer and Rosemary Clooney.

That Guy himself Michael Wincot. I always Mark Hard, whenever he Shows up! WINCOTT! My favorites are the bad guy in The Crow and the loopy bounty hunter in Dead Man ("Aren't you glad the sun kind of, like, sets? Imagine one minute you're riding along, it's light out and then boom! Total darkness! That'd scare the bejeezers outta me...") and I marked hard for his little cameo in the first episode of Westworld more recently. I popped for his small cameo in Ghost in the Shell. No coincidence that he's got prominent roles in two of my three favourite movies (The Crow and Strange Days).

Wincott was also good in the underrated Eddie Murphy movie, Metro.
I'll also add Cary-Hiroyuki Tagawa.
And Casey Jones himself, Elias Koteas.

John Astin was in a lot of shit. Yet I mainly knew him as "Buddy" from Night Court. (I'm pleasantly surprised to see he's still alive at 88.)

For like twenty years I knew if I saw this dude the movie was going to be amazing. I didn't even know who he was until like 3 years ago outside of "That badass from *insert awesome movie here*" He may have been in a million movies, but Michael Ironside will always be Sam Fisher to me.

Chelsie Claude Ross is so much "that guy" they did an article about his many roles. (I think Time magazine.)
You know his face, just not his real name. He was Eddie Harris, the spitballer in "Major League", former coach George Walker in "Hoosiers" (hoping to see the new coach fall flat on his face), Dan Devine in "Rudy".
He has over 75 credits as what's called being a character actor.
