We all seem to have a few of these laying around, great matches that never get mentioned or just flew under the radar completely. Something not part of a larger feud or just a randomly put together match that turned into something better than expected. So what ones are your go-to for this kind of thing?
I have 2 examples:
Shawn Michaels vs. Shelton Benjamin from Raw back in 2005. What an unbelievable match with one of the most memorable finishes from that time. These 2 went full tilt and put on one of, if not THE, best matches in the company that year. This one gets brought up from time to time, buy doesn't get the love it deserves.
For a real deep cut: Doink vs. Marty Jannetty in a 2-out-of-3 falls match on Raw from June of 93. Both of these guys were at the top of their game here. Matt Borne played his gimmick to perfection here and looked incredible in the ring. Marty is one of the most underrated performers in the history of the business and this match really highlights how good he was. There didn't seem to be any real reason or story behind the match, but these guys went out and put everything they had into it, and wound up turning in 2 of the best performances I have ever seen from either of them.

Chris Benoit vs. Rob Van Dam from SummerSlam 2002. For whatever reason, this is their only televised match despite being in the company together for 6 years. Anyway, they went out there and had a very different match than either guy was having at the time and it was refreshing. Benoit just beat the crap out of RVD any time he tried his usual fancy shit, so eventually Van Dam stopped getting fancy and just started laying in body kicks and forearm shots. That seemed to take Benoit by surprise, so he started breaking out a bunch of suplexes I thought he'd forgotten back in WCW.
Fun fact, this is also the only WWE match where RVD's hair came completely out if the ponytail. Probably says more about how rough Benoit was if anything.

Rey Mysterio and Billy Kidman vs. Chris Benoit and Dean Malenko vs. Raven and Perry Saturn at Slamboree 1999.
This match is so ahead of its time in that they were pulling out moves that I didn't think were seen on a major stage until a decade later.

There was this random John Morrison vs. Evan Bourne match on ECW right after Miz and Morrison were broken up by the draft that was really short but I remember immediately getting Morrison a ton of buzz before he jumped to SmackDown.

People don’t usually talk about the 1991 Ric Flair/Roddy Piper match in MSG shortly after Flair whacked Piper (and Vince by accident) with a chair. It’s a hella fun old school match, where Roddy oddly starts the match off cautiously and patient. They go back and forth until Ric gets a cheapshot to win. It plays nicely into their 1992 Rumble story, because Roddy running to the ring is clearly thinking “he’s gassed, so I ain’t making that mistake again this time.”

Randy Orton vs Christian, for as much people like to knock the decision of that SD match, the actual match quality doesn’t get brought up enough for how good it was and the chemistry they have

Malenko vs Rey Mysterio the night after BATB 96 was a really fun match that saw Rey win the title.

It rarely gets talked about for obvious reasons, but the Bret Hart vs. Chris Benoit Owen Hart Tribute match on Nitro was great. The best match Bret had in his WCW run.

Umaga and Jeff Hardy had phenomenal chemistry and always had great matches that stole the show in my book.
