Thumbs up to whoever mentioned Doink vs. Jannetty. The Borne version had a lot of good stuff in the brief time he was there. The Mr. Perfect KOTR qualifier series too.
I recall a really good Piper vs. HBK I-C title match before Mania 8.
Tag team title match at Starrcade '92.
Jerry Lynn vs. Lightning Kid 2/3 falls, GWF LHW title.

HBK vs. Jarrett at In Your House is an excellent match. Excellent choice. Probably Jarrett's best match.

Bret Hart vs. 1-2-3 Kid for the World title on an early episode of Raw. A great match that showcases how great Waltman was in the ring.

Bret Hart vs. 1-2-3 Kid for the World title on an early episode of Raw. A great match that showcases how great Waltman was in the ring. That was a case where even though I *knew* he wasn't winning going into it, they had me for a few minutes. Absolutely fantastic match. On that same vein, Seth Rollins and Neville had a match like that during Seth's first title reign. Neville hit his finisher and everything and for a split second, I thought he had it

Trent Baretta and The Usos vs. Tyson Kidd, Justin Gabriel, and Heath Slater on a random episode of Superstars in 2011 that completely tore the house down out of nowhere.

Chris Benoit vs marty jannetty on nitro. After a good match between the two, The flock attack Benoit and jannetty helped Benoit fight off the flock, which led to a match between jannetty and Raven on Thunder.

Chris Benoit vs. Rob Van Dam from SummerSlam 2002. For whatever reason, this is their only televised match despite being in the company together for 6 years. Anyway, they went out there and had a very different match than either guy was having at the time and it was refreshing. Benoit just beat the crap out of RVD any time he tried his usual fancy shit, so eventually Van Dam stopped getting fancy and just started laying in body kicks and forearm shots. That seemed to take Benoit by surprise, so he started breaking out a bunch of suplexes I thought he'd forgotten back in WCW. Fun fact, this is also the only WWE match where RVD's hair came completely out if the ponytail. Probably says more about how rough Benoit was if anything. They had one before this on the 7/29/02 Raw which led to the Summerslam match, both were hard hitting. Chris Benoit vs. Raven-nWo Souled Out 1998, I loved the finish as it helped put Raven over as a maniac who loved pain.

It rarely gets talked about for obvious reasons, but the Bret Hart vs. Chris Benoit Owen Hart Tribute match on Nitro was great. The best match Bret had in his WCW run. This match was very highly regarded until Benoit's death. It was included on both of their WWE produced DVDs.

You can't mention late era Jannetty without mentioning Jannetty vs. Kurt Angle on Smackdown in the build-up to WrestleMania 21. I will always remember Taz' call on commentary "where the hell has this guy been all these years?!"

Chris Benoit vs William Regal from Velocity I believe around August 2005. Those two guys beat the s*** out of each other like they were in the Wrestlemania main event or something. I think and hope I still have a copy of that match on VHS somewhere.

Sting vs Regal at Great American Bash '96.
Set up by an all-timer of a backhand slap from Regal, and then a tremendous match with Regal tying the Stinger up in various painful holds while Sting keeps fighting back with the power of 'MERICA~!
