I was watching monk and I’m surprised when I realized that i recognized some of the actors as children
I was watching the one with astronaut and while it’s obviously the one with jefffrey Donovan from burn notice, I noticed in during the credits that it said Ariel Winter. Then I realized that it was the little girl with doll.
I saw another one with the basketball coach who was killed. Most people pointed out that it was Jennifer Lawrence as the school mascot but I just noticed that one of Julie’s friends was 2nd Molly from Last Man Standing.
Also, was rewatching community and I did not know that coat check girl was Brie Larson. That was a shock. I’m too used to her Captain marvel appearance that she’s unrecognizable there.

Amy Adams has a cousin of Tara in Buffy The Vampire Slayer (think she appeared in Smallville as well)
Manny stole a bike from Millie Bobby Brown on Modern Family when chasing a drone, speaking of Modern Family, Eric Stonestreet (Cam) played a biker on ER

Not really guest appearances if they're not famous yet. More, bit parts.
Was just watching Never Been Kissed, second runner up prom king with like, 3 lines total: James Franco.
Barbershop scene in Coming to America is iconic, and Cuba Gooding Jr. is there enjoying the whole show in silence.
The Graduate, Richard Dreyfuss as the RA telling Dustin Hoffman he's not supposed to be there.
And of course Ben Affleck deciding basketball isn't worth it in the movie version of Buffy.

Rashida Jones in Freaks and Geeks, probably some more names that don't come to mind
Undeclared among others featured Jenna Fischer, Kevin Hart, Tom Welling, Lizzy Caplan and Simon Helberg before their big breaks, not bad for a show that didn't last a season
I was randomly watching an old episode of British sitcom My Family one morning and John Oliver popped up

A lot of famous actors had roles on soap operas before breaking out into larger stardom. Off the top of my head, Julianne Moore, Justin Hartley, and Usher all fell into this category. There's a lot more than just those three, but they're three that immediately came to mind.

Mark Hamill played a delivery boy on an episode of Night Gallery a few years before he became Luke Skywalker.
Also behind the camera, Steven Spielberg directed a couple of segments for that same series before he really did anything.

If you want to go back, All My Children was Sarah Michelle Gellar's big break, winning a Daytime Emmy, for the part of Kendall. But that's not a guest role. Brad Pitt was on Another World and Growing Pains in a guest role.

Jeremy Renner, Jeffrey Dean Morgan, Christina Hendricks, Kal Penn, Daniel Dae Kim, Summer Glau, and Alexa Davalos all had roles in Angel.
Graham McTavish was a fairly well-established TV actor in the U.K. before he had a small role in Red Dwarf, but has since gone on to have big roles the Hobbit trilogy, Preacher, Rambo, Castlevania, Lucifer, and Outlander, as well as a ton of guest spots on shows like Prison Break, CSI, 24, and Colony.

Kevin Bacon and Demi Moore had regular gigs on soap operas before moving into movies.
M*A*S*H had a ton of up-and-coming actors in one-off appearances... Patrick Swayze, Ron Howard, Joe Pantolianlo, Laurence Fishburne are the first ones I can think of.

Well voiced by him for the American version of MMPR What, you never seen Martial Arts Master Tom Hanks vs The Fonz? he was also in a slasher movie called He Knows You're Alone from 1980 as his first official acting credit. from what I remember he was originally meant to be killed like immediately but the crew liked him so much they expanded the part considerably...
