There have been some really good PPV's in recent times, but for the life of my I can't think of a single great episode of RAW or Smackdown in ages.
Last great RAW I can remember was the one in Seattle where the crowd crapped all over the Orton/Cena championship unification and they had a wild finish of everyone hitting a finisher. That was all the way back in 2013 now.

The NXT Invasion of Smackdown when most of the roster was still stuck overseas was excellent, sidestepping the usual overproduced nature of WWE TV and delivering both solid matches and a great overall narrative for the show.

I mean it depends how you define TV.
Pre-Fox NXT was banging out classics regularly for a long time. Off the top of my head, the episode that was entirely a 2 out of 3 falls match between Joe, and Zayn, who I don't even like.
I haven't watched it on Fox but heard it was good?
How about the Raw the night after Mania 31, wasn't that a good one?

Looking at our FAN rating threads, the June 15, 2020 Raw got an 8.5. That was the episode with the teased Christian match.
As for Smackdown, they’ve been turning out consistently great TV for awhile now.

I dunno about “great,” but a vast majority of SmackDowns since Roman’s return and heel turn have been very good.
The Reigns/Uso act on top is killing it right now.

NXT has weeks where it produces great shows top to bottom. SmackDown has been good some weeks but I wouldn't call any of their recent shows great just because there is still a lot of meh on it every show.

Not only this, but the show just BLEW on by with how quick and well executed the show went (as it always is whenever the WWE is up against the wall like that). It was one of the few times I wouldn't have minded an overrun.

The most recent I can think of is the Raw after Battleground 2016. The brand split was officially in affect and Finn Balor had his big coming out party on the main roster, plus Sasha won the Women's Championship from Charlotte.
Too bad it all went to crap a month later lol

There have been good segments, but as for an entirely great episode, probably at least 1998 or so.
