To start things off with I just heard one from Sean Oliver. He’s not a wrestler, but was the host of Kayfabe Commentaries. I was listening to old episodes of his podcast and he talked about his day job looping in films, some of which involved some pretty mainstream actors.
Anyway, Sean Oliver was doing some editing on the film Assassination Tango, which was directed and starred Robert Duvall. Duvall was hands on and working with him on the process. Duvall told him something like, “You have to edit it like it comes from the heart” then he reached down in his pants and started touching his dick and balls. Oliver points to Duvall’s genitals and starts saying, “Oh, I get it. Like that, real visceral!”
A few moments pass and Sean Oliver realizes that Duvall didn’t mean to draw attention to him scratching himself and the guy just had itchy balls. Oliver said Duvall and he didn’t talk about it after that and at the end of the day had a awkwardly quiet elevator ride together.

I can't remember who told this story, but I remember reading that Burt Reynolds was super nice in his WrestleMania appearance and seemed to have a really good time and be in awe of how the wrestlers were able to work without a script.

Chris Jericho has spoken about working with Mickey Rourke at Wrestlemania 25. Despite just doing The Wrestler Rourke didn't fully understand the business all that well and realize things on a stage like Mania are fully scripted. He was paranoid that Jericho would try attack him for real so brought Frank Shamrock to the show with him as his back-up in case something went down.
John Cena told a story recently about how he ended up in Barbie by chance. He was filming a different movie in the same lot and bumped into Margot Robbie. They were friends from starring in The Suicide Squad and she asked him to jump over and play Merman Ken opposite Dua Lipa's Mermaid Barbie, who coincidentally he had also just recently filmed another movie with (Matthew Vaughn's Argylle which is out soon).
R-Truth in the early-mid 90s was trying to make it as a rapper and has told stories of opening for Tupac and Eazy-E when they performed in Charlotte.
Oh and how did I forget Jeff Jarrett saying Taylor Swift used to babysit his daughters.

Bobby Heenan said that Ed Asner saved his dog’s life. It was shortly after they finished filming The Wrestler in the ‘70s, and they were having basically a wrap party at Dick the Bruiser’s place. Bobby brought his dog, a small breed, and had it wearing a Dick the Bruiser shirt (funny since Bobby no doubt had a higher opinion of the dog). At some point, the dog fell into the pool and because of the shirt it couldn’t swim properly. Ed Asner reached in and pulled out the dog.
Bobby thanked him, and Ed asked, “Why is he wearing a shirt?”
Bobby immediately replied, “He lives here.”

Sami Zayn told a story about on Jericho's podcast about randomly meeting Aaron Paul while on holiday in Iceland I think going up a volcano and after chatting for most of it ended up with some fan asking for a pic with both and mistakes Sami for Zack Ryder

I can't remember who told this story, but I remember reading that Burt Reynolds was super nice in his WrestleMania appearance and seemed to have a really good time and be in awe of how the wrestlers were able to work without a script. I think Bret mentioned it in his book, and how unlike a lot of celebrities just there for a payday, Burt Reynolds was genuinely happy to be there.

In his second book Chris Jericho mentioned running into Jon Lovitz at the WrestleMania 2000 after party and all night Jon kept asking questions about what the ring ropes were made of.
and circling back to Jericho's first book he told a story about being bitched out by Christopher Lloyd at a bar in Tokyo after Chris (Jericho) botched reciting a famous line from Back To The Future to him. (He mistook 88MPH for 1.21 jiggawatts)

I can't remember who told this story, but I remember reading that Burt Reynolds was super nice in his WrestleMania appearance and seemed to have a really good time and be in awe of how the wrestlers were able to work without a script. Reynolds was apparently a big fan of NWA Hollywood (The LeBell's territory) back in the day and was particularly enthused about meeting "Classy" Freddie Blassie.

One of the WWE road story books had a few of these. Off the top of my head:
Sgt. Slaughter met Richard Nixon on a plane. He was trying to switch seats to sit next to his wife, but Nixon's Secret Service wouldn't let them. Then someone recognized Slaughter and his wife arranged for the two to meet.
Jericho talked about meeting Donald Sutherland on a plane, while he'd been watching him in "JFK".
Not actually a celebrity encounter per say, but Trish Stratus got mistaken for Britney Spears by airport staff lol

The Nasty Boys had a story about partying with Willie Nelson at Wrestlemania 7 after they won the Tag Titles. Willie was posing with one of the belts and wearing it around at the bar, and it was the last they saw of it, and the WWF had to have a replacement made.

Two stories about Henry Winkler from conventions.
Nash said he ran into Henry. They talked for a while, and Nash invited him into the backstage area to hang out with them. Later, Henry went to take Nash up on his offer, but apparently he was stopped by someone who thought he was just one of the fans and told he couldn't come back. Instead of telling them who he was, Henry just said "sorry" and left.
Brian Knobbs said that Henry came up to his table, because he remembered him from WrestleMania 7, and started asking him questions about his career. Knobbs was dumbfounded that Henry even knew who he was, but said Henry stood and talked to him for about 20 minutes.
