Trying to find a balance, trying to build a balance.
It wasn't until 2020 that I saw the full High Incident Tommy Dreamer vs Brian Lee scaffold match. We all know *of* it from the ECW Extreme Warfare commercials and the very ending being seen in so many clip shows - but WOW! I'm using no hyperbole when I saw it's the best scaffold match I've ever seen. Hot crowd, chemistry absolutely clicking, and a surprisingly deep level of psychology. One to definitely look deeper in.
Next, the December 1991 Rockers vs Legion of Doom match from Superstars. I don't believe this has been on any of the LOD's or Shawn's many compilations, so when I saw it announced during my on-the-day rewatch of Superstars 91 a few years back I guess I expected it to be underwhelming considering the talent involved. I was completely wrong - great match, impressive finish and really pushed forward both the LOD's rep and the Rockers toward a breakup. Everything you could want from a Superstars match.
Antonio Inoki vs King Kong Bundy (1985) - Bundy's absolute all time best match. Just an outstanding encounter. You watch it and you of course since absolutely that Bundy needs to headline the next Wrestlemania.

I've always been a big Bundy fan. It really didn't take much to convince me he could be in almost any main event.

For a match between two non wrestlers, Steph vs Trish at NWO 2001 was better then it had any right to be.

Hogan vs. Giant at Havoc '95. On paper it should have been absolutely horrible, but Hogan really took care of a very green Giant (hahaha) and they ended up telling a really good story with that match, nevermind the shenanigans before and after.

Punk vs Chris Hero 90 minute match from IWA MS
Never been a Punk fan. And 90 minutes is long for a match. But they made it work. And it wasn't just Hero carrying the match. Both guys carried the match.

When I saw Alissa Flash vs Sarita on a 2009 episode of TNA Impact, it felt like one of the greatest women's wrestling match I had ever seen up until that point. Televised American feds never really saw that kind of stuff from its women rosters, at the time or even before really.
Also, I remember really liking Rollins/Lesnar from Summerslam 2019.

Boneyard Match. I didn’t have high hopes for an AJ Styles vs. Taker cinematic match in a graveyard…then Taker rolled in on his motorcycle blaring rock music and it was guaranteed fun. LMAO

Two immediately come to mind.
I'll never get over how surprised I was by the men's WrestleMania showcase tag match from WrestleMania 39. It had no right being as good as it was.
It had no build, no hype, and no expectations and turned out to be one of the most fun and exciting 8-minute car crashes I've ever seen in professional wrestling. Every single competitor in the ring gave it 100 percent and floored it from the moment the bell rang. I have no problem saying it was one of my top three matches of 2023, it was that entertaining.
Also, Undertaker vs. Batista at WrestleMania 23 absolutely stole the show that night. I expected a typical hoss fight and had low expectations considering the Undertaker was nearing 40 years old and Batista had returned to the ring nine months earlier and was still widely disparaged by fans, including that horrible match with the Big Show on ECW. But they gave it their all, and while no one would call it a five-star classic, it was wildly entertaining and was perhaps the Undertaker's second- or third-best WrestleMania match ever.

Orton v Foley at Backlash 2004. Orton was still really new and Foley didn't exactly look great at Mania or the Rumble even in tag/Rumble situations so I wasn't sure if he was capable of having a proper long singles match again after 4 years retired but it was a classic hardcore match.

Curt Henning versus Nick Bockwinkel in a sixty-minute draw on AWA wrestling…I didn’t think Nick had it in him to last that long at his age, but he pulled it off and it’s now one of my favorite matches ever.
Rod Trongard called it well and really sold the match.

I was a big Bundy fan going back to his appearances on Married…with Children, but I still wasn’t sure on how that match would be. I really enjoyed it.
