None,I don't drink milk.
When I did once that date hit the milk was thrown out.

I sniff test, but usually not too far past it.

My last gallon I was drinking a full week past the sell by date. I really only use it in my coffee and it was fine.

I haven't bought animal milk in years, and I don't buy enough oatmilk for running up against the sell by date to be a problem, but back when I did, the sniff test worked for me.

Drinking it? Probably 1-2 days. Cooking with it? I’ll push my luck up to a week sometimes

I find there's usually a distinct change in the smell and taste even 2-3 days before the "best by" date. That's when I'll chuck it.

not a chance, if it smells, it doesn't enter my digestive system!

Smell test. Don't have faith in a random number stamped on the side of a jug before it's shipped across country in a slightly chilled trailer driven by a madman who lies on his paperwork so he can get an extra hour to spend time with a 'truck stop girl' before downing enough speed to get through the next run.
... what?

Reminds me of this quote.
Kurt Angle: “I drank a carton of milk ONE DAY after the expiration date. Now THATS extreme. WHOOOO!”

Milk usually goes bad on me BEFORE the expiration date.

Personally it mostly depends on if it's summer or not. If it is, it goes bad before. If it isn't, it's probably fine 3 days after.

I usually won't use it once it's past that date. But I'll eat cheese and lunch meat a few days past that.

Once the best by date is passed, it's just the beginning of it's cottage cheese lifespan.

One at the most--milk is something that does turn after its use by date. Others, it depends on the food--I gave a jar of honey with a useby date of 2022... that use by date can f*** off. Honey lasts for ever.

None unless it's by accident.
I try to avoid smell test because it starts to smell bad before it starts to taste bad.

Skim - which I use for cereal in October and December - one day at absolute most.
2% - which I use for cooking/baking - 2-3 days.

With any use by date I'd always use smell/sight/taste test before throwing out. Huge amounts of unnecessary waste are caused by an over-reliance on use by dates.
