I've got two patron saintesses for this trope: Valencia from Crazy Ex-Girlfriend and Lexy from Chucky.
The former was Josh's bitchy, carb-hating, yoga instructor girlfriend who was (IMO) getting in the way of him and Rebecca. After her fall in S2 and subsequent joining Rebecca's "girl group," she became so much more likable.
I was actually rooting for Chucky against Lexy in Season 1. For obvious reasons, if you watched the show. She started out as a mean girl, but the show has done a good job of humanizing her since, and making her part of the surrogate family with Jake and Devon.

Rachel from Suits. Wasn't the biggest fan of her in season 1, she was pretty much there just to be the love interest and look great. As the show went on they fleshed her out more, and had her and Louis become friends. That last thing was one of the smartest decisions that show made.

Nelson Van Alden on Boardwalk Empire.
He went from a cliche character early on, to probably the only reason why I stuck around watching in the later seasons. Of course, HBO being HBO decided to off his character with little build up and decidedly random, instead of completing the full arc. He was probably the only character who I would have liked to have survived...but nope.

Clary from Shadow Hunters, thought she was the weakest link in the first two seasons but thought she was a lot better in the final season.

Flash from Justice League (unlimited). At first I found him annoying, but after Divided We Fall and especially Flash and Substance (I love the scene with him and Trickster) I softened on him and now he's one of my fav characters in the show.

Ahsoka Tano. Thought she was really annoying in the Clone Wars movie and season 1, but I grew to really like her. She became a favorite by the end of Clone Wars and during Rebels.

Just thought of a couple of others
- Juliette from Grimm. Wasn't a big fan of hers in season 1 or 2 but I warmed to her in season 3 - Hodges from C.S.I.. Don't know when the positive thing started but after a while his character grew on me from me finding him just plain annoying at first.

Wesley in Buffy/Angel. Started very much as this stick in the ass, by the books Watcher. Eventually evolved into probably the deepest character in either show.

Demitri in Cobra Kai. He had one note: socially awkward nerd who pisses everyone off with his motormouth. While he kept that aspect, it was toned down and he actually got some confidence and skill, and when he won the boys’ side of the All Valley, you actually wanted to root for him.
Correction: it was Hawk who won, but Demitri made the semis, and looked good in the process.

Helps that he is the embodiment of Miyagi's teachings. He doesn't want to fight, always tries to talk his way out of fighting, will try to walk or run away from fighting, tries to defend people not as good as him (watch the Christmas brawl), will forgive people, and will only fight if there's no choice

On a similar note, Richard Harrow for me went from a curious side character to a dark horse star of the show by seasons three and four.

Nancy Wheeler (Stranger Things)
I still don't love her with Jonathan, but Nancy has really shown herself to be the smartest one of the group. I also really dug how she became friends with Robin in season 4.

Cordelia in Buffy/Angel started as a one dimensional mean girl meant to be annoying. However, they developed her character and she actually became fantastic.

Because Rebecca no longer sees him as an ideal? Yep. Since How I Met Your Mother I have become a big fan of the idea of the unreliable narrator. For example the apartment in that show was huge. But it was actually much smaller and only seemed huge for NY. So first season Valencia as a shallow bitch and Josh a dream guy because they were Rebeccas rival and love interest. Once the situation changed we saw more depth from them, or even less depth in Joshs case as the image was shattered and he may seem even worse than normal because of that.
