In the WWF< Austin/Bret is my choice too.
In WCW, Goldberg vs. Hogan on Nitro. Hell, that was extremely similar to Hogan/Warrior in how it pushed someone to the top of the company.
Also, Benoit vs. Sullivan put Benoit on a level outside the Cruiserweight division. As a young kid, it made me think Benoit was legit.

Kurt Angle vs Benoit Royal Rumble 2003: Yeah Benoit was already a great wrestler, but that match(and standing ovation afterwards) made me believe he'd be a main eventer soon.

Shawn Michaels vs. Razor Ramon - WrestleMania X. Shawn was a midcarder for life until this match took place. Sure, he was a former Intercontinental Champion, but I doubt anybody saw anything more in Shawn. But the night he when out and had a 20 minute match with a ladder in Madison Square Garden, he truly made his career.
John Cena vs. Shawn Michaels - WrestleMania 23. To me, this is the match that made John Cena a bonafide Champion and made me a believer. It's one of the best matches in the 21st century and truly proved that when given the opportunity, Cena can go and deserves his spot at the top. Granted, he already beat Triple H the year prior, but in typical Triple H fashion, that victory was forgotten about and pushed aside, whereas the victory over HBK truly fealt like it meant something.
Edge vs. Mick Foley - WrestleMania 22. I feel this is the match where Edge proved himself to the doubters and made himself a main event star and propelled himself to the WWE title picture later on the same year. Edge had had many a great match prior to this, but never that career-making, star-defining main event caliber performance that Foley gave him at WrestleMania. My two cents.

Triple H was really difficult to take seriously as Champion prior to this match. But Foley was in top form and really went out his way to put Triple H on the map, and Triple H also took as well as he gave and the fans saw him as a true, legitimate badass and worthy of carrying the title belt. The fact that Triple H could hang his hat on the fact that he retired Foley a month later was just icing on the cake. The Street Fight was easily a match of the year candidate in 2000 and may actually be THE match of the year of 2000.

The first ladder match between Edge and Christian and the Hardy Boys. Four wrestlers went from jobbers to stars due to this one match. This. The standing ovation they got on Raw the next night pretty much solidified them as WWF stars. Also, Bret v Perfect at Summerslam and Bret v Austin at Wrestlemania 13.

Lesnar-Taker Hell in a Cell this is my vote, such a brutal fight. Also Edge cashing in for the first time and finally taking the title of Cena. It made his whole personality.

I'd say the JBL vs. Eddie Guerrero match would have really gone a long way in establishing JBL as a main eventer, except that Judgment Day 04 was one of the loiwest buyrates of that year, partially because JBL was a mere midcarder who couldn't beat Scotty 2 Hotty with his career on the line going into the show.

He was the first real one on one match the Kane character had, at Survivor Series. A lot of people seem to forget about this match but I never did, and Foley really put Kane over as indestructable. This was a match that made people think Kane could never be beaten. His feuds with Orton and HHH and how he put both these guys over are well documented. He was also the first feud Rock had as a heel World Champ and IMO the classic matches they had really put the Rock over as a legit champ. Then there is his match with Edge at Mania which helped to springboard Edge into main event credibility [Ric Flair helped here too but Mania is much more important than your average RAW].

MVP vs Kane sealed MVP as someone who I went from hating to respecting and now liking, despite his whole gimmick of sayin' thug things like Ballin', and weariing thug bling, etc.

The Undertaker defeats Hulk Hogan for the WWF title at Survivor Series 1991. I think this was the match that made me say "OMG, he just beat Hulk Hogan, so I guess he isn't just a gimmick."
Hulk Hogan defeats Andre the Giant at Wrestlemania III. Hogan was already a big star by this point but this match cemented it for him.
Shawn Michaels beats Tito Santana at Wrestlemania VIII. I believe this was Shawn's first major singles push and it was against a huge established and highly gifted athlete.
Bret Hart beats Ric Flair for the WWF title. Who would of thought it and didn't it seem like it came out of nowhere? Bret was always a great mid-card wrestler, but this win really put him up there. Watch Mr. Perfect's shocked look after the match.

For me, I think Undertaker's feud with Yokozuna took him to a new level. I know he had become champion before that, but his battle with Yokozuna introduced the supernatural elements that made him more than a mere wrestler, but an attraction as Andre had been. This was just mere months after I had started watching, and I loved every minute of it.
