This thread is not about shows like "The Critic" or "Titus," which never really got a chance to take off. I was thinking more along shows that lasted for many years such as Seinfeld or Cheers, that could have went on. Here are some long running shows and my opinions on them.
Seinfeld-Definitely could have gone another season in my opinion. Maybe two.
King of the Hill-Same.
Married with Children-Same.
Mystery Science Theater 3000-Th is show should have been like Dr, Who or something and just gone on for decades with rotating stars. Although luckily with things like Riff Tracks, it has something that continues on.
Cheers-Ended at exactly the right time.
That 70's Show- Went on for WAY too long.
Happy Days-Same.

Sports Night, Strangers With Candy, Arrested Development, Mission Hill, Home Movies, Mission Hill didn't even finish the first season apparently. There was suppose to be 20 something episodes in the first season. They only showed about 10.

Plus it sucks that it ended on a cliffhanger.

Notes From The Underbelly. It was a pretty funny comedy show, dealt with some of the same stuff that JUNO and KNOCKED UP did (but on a more mature level, IMO) and had a great, likable cast that a lot of folks could relate to.
I've been told that both pregnant couples had their children by the end of season 1...but that doesn't mean they couldn't keep the show going! People DO have more than one kid, you know...not to mention that you could have brought in a new pregnant friend, who's having her first baby, and now the woman from the first season has gone through labor and is the experienced one, lending her friend support and advice....heck, there was a LOT more that could have been done with that series.

Mr Show with Bob and David As awesome as Mr.Show was I'm not sure if could have lasted an longer. Both Cross and Odenkirk have said that the pressure of writing and shooting the kind of post-sketch-sketch show they wanted to do was wearing on them by the end of the show.
