I know all Klingons aren't played by black actors but the guy playing General Martok being white really surprised me (I'm currently watching DS9 for the first time.)

yeah I didn't know that either until they did the episode where Sisco was a sci-fi writer in then 1940s and the guy who plays Martok was a very white truck driver. it was neat seeing the various alien cast members like Michael Dorn and Armin Schimmermann out of their makeup.

He was like many of the common guest stars in the sense that he played multiple roles. Perhaps the most interesting was Laas, the Changeling that Odo befriended that was another of the 100 Changelings that had been sent out to explore the galaxy (like Odo). It was interesting to see essentially an older version of Odo that had gotten tired of being treated differently to the point that he chose to view "Solids" as insignificant and therefore not worth worth associating with.
