Which do you think should happen? Should the Undertaker eventually retire with a perfect win streak at Wrestlemania? Or should Undertaker "pass the torch" to a young up-and-comer who could use the rub of snapping the streak and help push him into one of WWE's future mega-stars.

Retire. At this point, giving the streak to an established star would accomplish nothing and it would probably kill the career of someone on the rise. Besides that, he can always come back for the occasional money match with it around, while if the streak goes it's gone for good.

Though I think that it should never end. Who is believable enough/would the majority of fans buy to end it?

I am not at all saying to give it to an established star, but to possibly do the "time honored tradition" of passing the torch to someone he sees fit as a rising star (or WWE sees fit).

He's held that crap this long just let him retire with it.
It's overrated. They didn't even notice it until like WM X7 and now it's superceded it's role to itself.
"The Streak" has become more important than the storyline of the match to the point that his last 3 matches have been about ending the Streak.
I wish he'd go away. He's keeping more deserving people off the card.
And before anyone says "so is The Rock"....he might be but he can still go full force. Taker can't.

Just retire with it. There is more money in that than 19 (or whatever) and 1. Plus you only have one shot at ending it and I don't think WWE even trusts themselves (or anyone on the roster) to do it right at this point.
Also, I think there is good money in someone chasing the record later on. Someone like Dean Ambrose (just thinking of someone in FCW, not saying him specifically) going 10-0 and talking about going after the record and someone stopping him, that becomes a feud on a major level that could always be revisited.

I think someone should end the streak. Yes, someone can chase the record, but either they might not have the longevity that Taker had, or by the time they reach a certain point, such as 10-0, they're already well established to the point that surpassing the streak would be seen as just "feeding their ego" or piling on an accomplishment they don't need. If the new guy's streak is built up to The Undertaker's, then we'd have this same argument down the line about whether THEIR streak should be ended.

If hypothetically, the streak ended, who would then have the biggest wrestlemania streak? Is RVD 4-0? Also if taker had a gauntlet match at the next wrestlemania, could he add a few extra notches or would it just count as one?

It should never, ever end. They should have someone else slowly start building up a streak, but Taker should never job at Mania, ever. The Streak is the last stand of kayfabe, will someday sell more DVDs if it's 25-0 than if it's 24-1, and is just an awesome angle.
And Taker can still go. Jesus. You all keep acting like he's moving like Khali.

Anyone that could possibly benefit from it, creative would f*** it up and yo yo 'em up and down the card so that in a year, it'd be largely meaningless.

Any current superstar with enough credibility to end the streak doesn't need the rub from it because they're already an established star. And any up-and-comer that ends up having enough talent to actually deserve to get a rub from it should have no problem getting over without it. So there's really no benefit from ending the streak.

Just think if they had Kennedy(or someone similar) end it a few years back when he was the hot thing for them.
