Good Boy.
I think 180 is what you should aim for.

I need to get down to 180, I'm 6'1 and 208 lbs.
I'd like to say it's all muscle but...

When I first started getting seriously into wrestling I went from 180 down to 160 (even though I had been heavily into martial arts before, once I started with wrestling I "balooned up" some) before now I'm back to 180, but with only roughly 8% fat. For 5' 9" I'm telling myself job well done.
This was over a period of couple years though that I did this yo yo.

I'm not training as a wrestler but I am losing a lot of fat and adding more muscle to myself. I'm 6'3 and 230 pounds right now, and at least 22 percent of my total mass is fat which I want to bring down to at least 15 percent. Right now I am working at least 4 to 6 days in the gym on the treadmill and focusing my upper part of my body as I have a lot of muscle/strength on my lower body.
I say for you buy protein shakes and use it before and after your workout. I personally stopped due to bad digestion and having other bad side effects. If that doesn't work for you, eat eggs, pasta, drink milk, steak, and others that are high in protein. Also, I suggest doing workouts with repetition in sets instead of going up a weight level after every set(as it is gaining muscle as oppose to stamina. Do them slow and controllable, because if you do them fast it doesn't do much for you.

I could use a bit more weight. I'm fairly tall (6' nothing) and in good shape, both in the essential requirements in my blood and in terms of muscle. Twelve years of Tae Kwon Do toned me up nicely. But I'm only 135 pounds, and I think I might be losing a bit of weight, since I haven't been eating well lately.
I should really get into a habit of eating lots, often. Even if I never plan on being a wrestler, it would be better for my health.

People will talk all they want about physique, but the most vital thing is longevity and endurance. What really matters is being able to go full force without stop for however long it takes. Nobody is going to take a wrestler seriously if he gets winded after throwing a few strikes.

Nobody is going to take a wrestler seriously if he gets winded after throwing a few strikes. Which is why cardio is the bread and butter of the sport. Look at Joe and Foley. Obviously those guys don't have amazing physiques, but those two can/could GO for a long, long, long time. Foley's cardio was always underrated because that guy could wrestle a match that went a while.
