While not as exciting as their first Wrestlemania match, HBK vs. Undertaker II is just so perfect in every aspect.

Another vote for HBK/Taker at WM 25. It had everything you can ask for in professional wrestling.

Bret Hart vs. Jerry Lawler, Summerslam 93. Chaotic, physical, funny and over the top.
There are a number of matches I like just as much, if not a little more, but it's the one match I can say embodies what wrestling should be as far as I'm concerned.

I agree with many of those posted, and I will also throw out Cena/Punk on RAW this year for the Wrestlemania title shot. A good match with a simple strong story.

When I think of a match that incapsulates the craziness of pro wrestling in 30 minutes, it's Rock vs Triple H at Backlash 2000. Great storyline, tons of action, ties up about 4 different story lines in one match, and provides a satisfying ending where 2 of the biggest good guys of all time put down some of the best heels of all time. It's almost perfect.

Hogan vs Savage at Wrestlemania V The end of an amazing storyline. I second this. It is the standard by which all feuds are judged.

John Cena vs CM Punk from RAW before 'Mania this year. I think it's a perfect case-study in the whole point of pro-wrestling, in terms of the result being glaringly obvious -hell, they even advertised the fact Punk had no hope via the WM29 promos airing before he even gave up the title-, but once Cena and Punk got in there and did their work, it truly felt like a real, high-stakes piece of drama with an unclear winner.
And anyone who yarns on about it the fact it should've been a WM main-event, well yes it was that high a quality, but some perspective is need:
We got a $50-60 main-event match.....for free.

Ricky Steamboat vs Ric Flair. Particular match? Just pic one. No two wrestlers fit so perfectly together as these to did. These two told a story every time they wrestled and left you breathless and exhausted at the end every single time.

Tully/TA for the US title. Had a story, two guys who did wonders with each other. Admittedly lots of hindsight and what could have been every time I watch it.

Warrior vs. Savage, Wrestlemania VII. Hell of an ending to a hell of a story.
The two Michaels vs. Undertaker matches are favorites, too.

John Morrison vs Rey Mysterio for WWE It was an amazing match it was back and forth and it seemed like they were both just struggling to be the better man.
For anywhere Mike Quackenbush VS Eddie Kingston It was exactly what a title match should be, no BS hot heavy and emotional.

Honky Tonk Man vs. Randy Savage for the IC title, Saturday Night's Main Event, September 1987.
You had one of the most hated heel champions in history, with the crowd desperately wanting to see him lose that belt. You had a newly babyface challenger (and former champion) whom the fans were absolutely falling in love with. It was coming to a head on national network TV at a time when the biggest feuds were showcased in one of two places: WrestleMania or SNME. The match was intense and well-paced and the crowd was frenzied. You could just sense the title change in the air. And then, when the challenger finally hit his KO finisher and had the match in the bag, down to the final count, all hell broke loose with the Harts attacking, Elizabeth getting shoved down, Savage taking the guitar shot and Hogan being dragged in for the rescue.
That match confirmed Savage as the uncrowned champion, shot Honky's hateability factor into the stratosphere, built a whole new aura of drama around Elizabeth and started the alliance angle with Hogan that eventually became the WrestleMania main event 18 months later. Just a fantastic piece of theater.

Angle/Lesnar Iron Man Match.
Told a great story, and got creative with the rules (ie: sacrificing a DQ fall to further punish/soften Angle and pinning him to bring the score back in line.)

While not my #1 (that would be Hogan/Savage WM V), I think some consideration, as crazy as it sounds, should be given to Dreamer vs. Raven at Wrestlepalooza 97. The promotion's biggest feud finally comes to an end, and immediately got heat on the WWF "invasion" angle.

Angle/Michaels, WrestleMania 21 is to me the quintessential wrestling match. It's not flawless, but it's an excellent match in basically every aspect, and it's basically the last of its kind within WWE.
