Singles - HBK/Angle at Wrestlemania. I was 14 when I saw that match and I hadn't yet heard of "workrate" or any other inside terms, but something inside me knew that I was watching two of the best put on something special.
Tag - Here's a curveball: London/Kendrick vs. The Teacher's Pets at No Mercy 2006. A simple, perfectly executed tag match.

CM Punk vs. John Cena from earlier this year.
Not too long, didn't drag, you have a fantastic story, and two great workers.

For an older match, Bret vs Owen from Wrestemania X is good for showing off both wrestling skill and story.

Y2J/HBK is a great pick, as is Angle/HBK. When I think "quintessential" wrestler, I think of guys like Bret Hart, Arn Anderson, Chris Benoit, Steve Austin, Steven Regal... but I have a hard time picking out one match that stands out among them.
