Not necessarily your favorite match, or the best match you've ever seen. But a match you watch and think "yep, that sums up my view on what pro wrestling is/should be, right there."
Mine? Chris Jericho vs. Shawn Michaels, WrestleMania 19.
It's not an innovative match, by any means. But, it's two guys with an archetypical story going in (the young lion wants to dethrone his idol), and established personalities/movesets that allow them to creatively play off of audience expectations and emotions to elicit the desired reactions. Stylistically, it's technical and fast-paced, but it's not complicated, stiff, or spotty. They do some aerial stuff, but nothing wild and showy, nothing going for a "holy shit" response. Both guys stay in their lanes and are completely comfortable with everything they do, and their chemistry is dead on. I love how back and forth it is, and all the wrestling cliche type stuff like the small packages/slingshots/bridge-to-backslide etc. And the leverage pin finish...I'm a sucker for that. It's not Wrestling 101, more like Wrestling 301, and they aced it. I'll take that over 2 guys trying to do too much and coming off like they're trying to show me how great they are instead of having a good match, there's a difference to me.
I'm interested to see what other posters name as their quintessential wrestling match, I anticipate that there will be a wide variety of responses since pro wrestling is something different to everyone.

Savage vs Steamboat WM3. It was the first feud I was completely emotionally invested in (I was 8) and the match is perfect. The near falls and ebb and flow never ceases to amaze me.

The first HBK/Undertaker match at WM 25. To me, that match defines the whole idea that wrestling is really storytelling.

Foley vs Triple H street fight.
Great action, fun to watch, clearly defined despicable heel going up against a likeable, interesting and entertaining babyface who you wanted to root for. Plus a simple yet good storyline leading up to it with no needless silly twists or turns (Like Nash texting himself) to mess things up.

This is a bit of an 'IWC' pick, but I don't care.
Dean Malenko versus Chris Jericho, at Slamboree 1998. Include the battle royale leading up to it as well. This was the culmination of an epic build. This IS the template of how you do an undercard feud. It mattered. There was emotion, and context, and it had a belt involved. And both men's actions made the belt important. That's what you want.

Bret Hart vs. Mr. Perfect, SummerSlam '91. To me, it's the perfect balance between wrestling as a pseudo-sport and entertainment.

The Randy Orton vs. Christian series of matches from 2011. Every single one of those was a perfect wrestling match.

Another vote for HBK vs Undertaker at WM25, even the entrances were wrestling distilled into it's simplest light vs dark form.

I'd say Kurt Angle vs. Shawn Michaels from WrestleMania 21. Not my favorite match ever (though it is damn good), or two of my favorite guys ever or anything, but you have brawling, crazy technical stuff, ridiculous drama (namely just how damn long Michaels lasted before tapping out), high-flying nonsense begging for a broken neck, and a great build that straddled the line between serious and goofy in just the right way to be a good show of what wrestling is.
Honestly, the Michaels / Jericho match has never really worked for me. It's definitely good, but one issue I kind of have with it is the story they were building kind of indicated Michaels should win by pure guile or experience or whatever, but instead he just kind of spent most of the match kicking Jericho's ass and at no point did Jericho really look like he had any actual chance of winning except when he nearly got a count out. Though that being said, on a technical level it would be a good match to show off, it is still a lot of fun despite those grievances I have with it, and the post-match stuff was done perfectly.

My faves have already been listed: HBK/Angle, HBK/Taker and the Christian/Orton matches (pick anyone, they were all great showcases for wrestling).

I'd say Hogan/Rock WM X8 or HBK/Taker WM 25.
Both matches just have this electric atmosphere throughout them and the crowds for both sell the passion that wrestling fans have.

It's a toss-up between Hogan/Warrior at WM6 or Hogan/Rock at WM X8. Both matches featuring the biggest stars with the biggest followings going head to head on the biggest stage, no BS about it.
