It wasn't the "streak" to me until WM 18. After that...it became fairly predictable. The only times I thought there was a clear chance was Orton at 21 or Michaels at 26.
Although I was absolutely shocked when he beat Kane at 14.

The only time I thought they would end it was when they started mentioning that Edge had his own WM undefeated streak going. At the time, I figured they would do a streak vs streak match & Taker would put Edge over as the younger guy.
Obviously, that didn't happen. During the Shawn matches, maybe a moment here or there when I thought "whoa really", but overall it has always seemed to be something they will protect until the end.

It's not getting broken. We've reached the point where only established stars can even somewhat believably challenge the streak. What would even be the point of Taker losing at Mania now? He'd be giving "the rub" to someone who doesn't really need it and is already made.

I thought Wrestlemania 21 was the time to do it, if it was going to be done. "The Legend Killer" kills the legend of the streak. Now I know it will never be broken. Yeah, something about Orton ending it felt right at the time.

WM 21 chokeslam countered into an RKO. I would a been totally okay with it. Probably this. I was like "....Oh shit. That was awesome. That HAS to be it!"

Undertaker vs Kane I
That match was probably the closest the streak came to ending. It didn't really exist yet. People talked about it, sure, but the WWF did not acknowledge it. What better way to get Kane over than having him beat his brother in their first one on one encounter?

I thought Punk had the best chance in years until Paul Bearer died. It was all telegraphed after that.

Nowadays the only way I could accept the streak being broken is if a frustrated Cena cheated to end it.

No its never in doubt so I find the matches boring That's usually my complaint. What's the allure of a match where you know the outcome? It's like watching sports with Biff Tannen's almanac.

He'd be giving "the rub" to someone who doesn't really need it and is already made. Because of this, I feel that now what they should do is make younger guys look strong in a loss. Taker's mystique has been built up so much that the idea of scoring actual offense on him, or hell, being in the ring with him for ten seconds and still be standing, is a feat in itself. I'd love to see Taker vs. Ziggler, or Taker vs. Bryan.

Every year I get sucked into the match and think Taker might lose. This. Does that make me a "mark"? Sure, but it makes the experience that much better when I can get lost in a match.

Shawn had me going on the first match, but in the retirement one I knew Shawn would lose.
Triple H had me going both times simply because it's Triple H and he doesn't tend to lose.
Punk never convinced me for a second, although I did just lose myself in the match's storytelling for a while.

Yes. I thought Flair would end it. Then, I thought Randy would end it. Then, I thought for sure Batista would end it (I just didn't see Taker walking out with the WHC). After that, I thought HBK would do it (kind of put him over the top as Mr. Wrestlemania). Then, I figured he'd do it the second time (didn't expect him to retire). I figured HHH might want the rub from beating Taker the first time. And after the SCM/Pedigree thing in the second match, I figured it was over.
...never really expected Punk to win. Didn't really want him to. But, man, what a match!
So, yeah. Even though, in hindsight, it usually seems "pretty obvious" that the Streak would remain, DURING the match? Edge of my seat.
