Whenever people hear the word knockoff, they usually think of a cheaply made copy of a better product or show. 9 times out of 10 this is true. However there are uncommon cases when the knockoff is actually just as good as the thing it's copying and rare cases when the product or show is outright better.
For me, it's Sonic & Sega All-Stars Racing and Crash Team Racing. They both shamelessly copy Mario Kart, but are arguably come off as much more fun than the original games in their time(MK64 in CTR's case and MKwii in All Star's case), though your mileage may vary on that if you worship Mario Kart and think of them as knockoffs regardless...
What other products fall into this category in your opinion?

I do like kart racing as a genre, and whether they were as good or better, they were certainly worthy entries into the genre.
For me, Crusader of Centy/Soleil, while being written off sometimes as a Legend of Zelda clone, is better than some of the Zelda games out by then. In my opinion, it's a better game than Link's Awakening, though I will concede Link to the Past is going to be better to most people. It more than holds its own, though, to me.
Marshmallow Mateys are much better than Lucky Charms.

While we're on the topic of sonic, Sonic Shuffle was way more fun for me than Mario Party. Especially with the mini games. Especially when one player is a giant while the other three players try to fight him.

Not exactly knock-offs in many cases, but off-brand/lesser known brands of potato chips are vastly superior to name brands like Lays.

It's almost painful to say it because I'm such a Lord of the Rings Fan... but if you only wanted to sit down and watch one movie that covers little people/swords/dragons/mcguffins/wizards/Dark Lords/and the like, watch Willow.
It's a fun and surprisingly violent movie. Sure, the entire run of LOTR movies are better but I'm just saying that for one movie vs 6, Willow is awesome.

Transformers are much much better then the Gobots.
I would say Power Rangers are more popular than Voltron ever was. (I prefer Voltron though)
Romeo and Juliet is much better than Tristan and Iseult.
