The Beatles sound like a good idea until I think about how I get annoyed enough by modern day habits of concert-goers to have to factor in the non-stop teenage girls screaming literally from the top to the bottom of the show I would just come away from the experience disenfranchised by the concept of one-time-only time travel.
I would have to see Frank Zappa perform live.

Genesis, with the 5-man lineup with Steve Hackett & Peter Gabriel.
Playing stuff from Selling England by the Pound, Foxtrot, and the Lamb, with Peter in full showman gear, and Phil on the drums playing at his absolute best.

GWAR in '99. Oderus was still alive, Slymenstra was still with them and for that short period they had the original Beefcake and Flattus Maximus back. I would have loved hearing Slymenstra's "Don't Need a Man" live. From looking at his list, I think @irontyger would have loved it as well.
Never seeing Oderus live is one of my biggest regrets in life.
