The Jet Set radio games absoloutley still hold up IMO but this is also because I believe cel shaded graphics hold up better long term than alot of poly 3d games.
Heck in general there are alot of dreamcast games that still hold up now.

So many of the Genesis games I played the hell out of in high school still hold up.
Streets of rage 1 and 2 Sonic 1 and 3 Phantasy star 2 and 3

Games with more stylized sprite-based graphics age much better than earlier 3D CG games, so I think a lot of the SNES and Genesis games actually age better than N64 and PS1 games, though games like FFTactics still aged very well to me.

Final Fantasy 4 and 6 hold up better than most of the PS1/PS2 era games.

Suikoden 2 still holds up fantastically; 1 was an early PSX RPG and it feels way too short and just not quite there while 2 has the pacing nailed, the characterization down and all of the little flaws of the original ironed out.

Star Fox 64 is still fantastic (a rarity for an N64 game) Gargoyle's Quest still holds up Lemmings is still awesome Warcraft 3 is still solid. Flashback is still a fantastic game I will always go back to even though I have beaten it several times.

I was playing Pandemonium for the PS1 recently and thought it looked gorgeous, especially considering it was a relatively early PS1 release.

Adventure on the Atari 2600-Few summers back my youngest wanted to play "An old adventure or rpg game" So I showed him Adventure. He played it,on the random mode,for over 2 hours. Had a blast.
But yeah while he loves NES,SNES and Genesis games,he isn't a fan of PS1/N64 era stuff. "The graphics look odd. Plus this Nintendo 64 controller is bad."
For me most of the games I grew up on aged well. But I kind of got out of gaming after about 94. And besides grabbing a PS1 cheap and then a Dreamcast haven't really bothered with home console gaming in a long time.

Well a few weeks I found my old master system and popped in Wonder Boy III: The Dragon's Trap. For a 28 year old game its aged very well.

Spyro trilogy. 2 and 3 are an exercise in how to make a great 3d platformer, and due to their draw distance coding which everyone ripped off, everything looks way better than it has any right to on a PS1.

For me, this subject begins and ends with Mike Tyson's Punch Out.
I will still spend hours playing that game to this day. In fact, I played it for a couple hours like a week ago. So simple, but so challenging. One of my favorite games ever.
