Fond memories for a lot on the list here.
I'll also advocate Gunstar Heroes, SMB3 and World, Adventure and many of the SFII games.
A few people here know about my love for the PS1 game Torneko: the last hope (a DW offshoot), which is a rougelike game where you don't have to really care much about the story. Great mindless fun.

Kinda surprised not to see it yet, but a big one for me is GTA: San Andreas. It got the ps2 era GTA controls as perfect as they could be to the point where GTA 3, and Vice City are pretty much unplayable for me. Plus the world of San Andreas is still one I enjoy exploring, and having fun in.

Most 16 bit games that were good new still hold up today. Super Mario World, Super Metroid, Turtles in Time, Sonic 2, Final Fight 2, etc.

I recently played the old Gex games from the PS1, they were still a lot of fun. Croc holds up too in my opinion... I guess I just like green reptiley heroes.
Smackdown: Shut Your Mouth does and WrestleMania the arcade game is still a lot of fun
It's premature to say but I imagine Heavy Rain and LA Noire will hold up tremendously well for many years to come.

Super solid fighters too and you can get'em for peanuts with the PS2 Alpha Anthology (you know, the glory years before digital distribution saw such packages sliced up and sold at a premium?). To your point about the Sonic Adventure games. I'd largely dismiss them, but would concede that it's only because there's a decent game in there just suffocated beneath an excess of design-by-committee nonsense (I mean, Sonic is a design-by-committee creation, so it has worked for the character). Like, I was spurred on to complete by the vague promises of the Sonic bits (roughly a 6th of the series, bafflingly for a Sonic title), but even at that, with its wonky collision detection, bonkers camera and frequent "oh, I'm doing grea....no, it's an automated sequence" moments, even its redeeming bits are kinda laboured for me. I'd contest that Sonic Colours is criminally underrated in the larger Sonic canon. People'd been so done in by the Sonic cycle and Colours' Wii exclusivity (not too mention Sonic's other Wii-only entries kinda pooped the bed), that Sonic's premiere 3D experience tends to just not come up when "is the hedgehog finally dead?" conversations arise. Has Metal Slug been mentioned? Outside of MS 2's 0FPS botch, it looks and feels like a big, chunky labour of sprite-based love. The difficulty in 3 can go suck a f***, frankly, but, yeah, they're still fresh and slick. I think the good in the Adventure series outweighs the bad, but Colors was ace and surprisingly addictive. It just felt really comfortable to play.
