Cast commentaries. Apparently some streaming sites have this option now,
If anyone watched Excel Saga, they had this cool pop up video feature that would explain every reference.
Rurouni Kenshin has a section where they explain the historical references
I think Joyride, had a choose your own adventure thing where you could press a button to get a different ending without stopping the movie and going to the deleted scenes
Things like this, make me hope streaming doesn’t totally obliterate Discs.

The Brother Bear DVD has Rick Moranis and Dave Thomas doing commentary in character as Rutt and Tuke, doing their Bob & Doug McKenzie voices, and it's hilarious. I still quote it sometimes.

Godzilla: King of the Monsters has some great BTS about the 4 main monsters in it and how they came up with the designs and how they wanted to pay respect to what came before while still making their own thing. It also has a real good commentary track with the director, writer, and one of the actors.
The new Planet of the Apes trilogy has some great BTS where you can really see the performance that Andy Serkis put in the motion capture.
The first 2 American Pie movies had some fun commentary tracks from the actors.
One that might seem odd is the movie Eurotrip. It has 2 commentary tracks from the same guys, but in one of them, they play a drinking game with the movie and it becomes very very entertaining.

Community Season 1 cast evaluations mostly for Gillian Jacobs being silly
Freaks and Geeks had more commentaries then there is episodes
The Office Season 7 as the movie Threat Level Midnight (about half hour long and includes stuff not in the episode) - Rashida Jones steals the show for me
Always liked the in character commentary for This Is Spinal Tap, not all in character commentaries work
I liked Roger Ebert's commentary for Casablanca (biased since it's one of my favourite films)
I remember liking Ben Affleck's commentary for Armageddon because he makes fun of the movie

Midway through they order a pizza, and when it shows up they get the delivery guy to sit in on the commentary for a bit.

The Doctor Who Episode "Revenge Of the Cybermen" has a great mini doc called "Cheques, Lies & Videotape" which is old who fans talk about the hoops they had to jump through to see older episodes before they were finally released on video.
Makes one appreciate how easy it is now to get em now.

With the first couple of phases of Marvel movies, when they were released on disc they'd have features on the comic history of the characters as well, and interviews with the writers and artists that worked on the titles. It's a shame they have't continued with those with the more recent releases.

Anchor Bay used to put out some great sets. That (78) Dawn of the Dead box set has a ton of great extras. I'm hoping they do a version of this on a Blu Ray in the states.
Speaking of Romero movies, the Roger Avary commentary on Day of the Dead was pretty fantastic. I think it's on both the Anchor Bay and Scream Factory pimped out sets of that movie.
The Universal Horror doc that shows up on some of the Universal Legacy collections (as well as the single Blu Ray editions of some of the solo movies). Such a great look at Universal Horror (and other related films) in Hollywood's Golden Era.
Universal's Blu Ray release of Halloween II (the original) has Terror in the Aisles as an extra, as rights issues keep it from ever getting its own release.
The Just Deserts doc (on Creepshow) has the Scream Greats Vol. 1 doc (on Tom Savini) as an extra on it. Worth picking up for that alone.
The Almost Famous Bootleg Cut/Untitled has a TON of great extras.

some wrestling DVD have matches that aren't a part of the actual set as extras and those matches are better than the ones on the actual set
Like, weren't the matches on the Rise and Fall of ECW DVD all considered "extras". Some good matches on there.

The supplemental materials on the extended editions of the Lord of the Rings trilogy is phenomenal. Something like 40 hours of behind the scenes stuff, documentaries, interviews, and four different commentaries per movie. I sometimes question whether I like watching how the movies were made more than the movies themselves.

The Edgar Wright/Simon Pegg collaborations. Being geeks themselves they’ve crammed the DVD extras with stuff geeks (like me) would appreciate. Backstage footage, multiple cast/crew/fan commentaries, storyboards, plot holes, back stories, bloopers, deleted scenes, trivia tracks, homage references...just things that help flesh out the film and offer more insight into the production.
Seinfeld box-set extras are also quite good for exactly the same reasons.
