So why haven't the police ever fingerprinted something he touched and then matched them to Clark Kent's fingerprints?

Does he? He's Kryptonian, they might look completely different than human prints if they even exist at all.
I know Lex got Zod's in Batman v Superman, but he also created Doomsday with the corpse, so that's not exactly 'canon'.

Does Superman even leave fingerprints? I assume there'd be nothing but rubble left over.

Operating on Grant Morrison logic, Superman must have Super Fingerprints. They can't be comprehended by our tiny human brains.
Except Batman can, because now I'm operating on Frank Miller logic, and that means Batman is the bestest and Superman is a smelly geek who doesn't even know he can fly.

Depending on canon Clark has been arrested and therefore fingerprinted. You could also say he probably has been for security clearances for his job.
But maybe Superman can not be fingerprinted. Fingerprints happen because of skin oil and maybe Superman does not excrete that like humans. Superman could be fingerprinted with ink but never leaves them behind naturally.

I'm more confused how just a pair of glasses fools everyone. Ive always thought there was more to it than that. He’ll comb his hair differently, wear clothes that don’t quite fit, slouch when he walks, and speak differently than how he does as Superman. There’s a scene in one of the Chris Reeve movies where Clark is about to confess to Lois that he’s really Superman, and he stands up straight and his voice gets a little deeper, and it actually makes you believe that nobody would really notice that they were the same person. It only took Lois noticing that Clark vanished whenever Superman showed up for her to start putting the pieces together.

Pre-Crisis, it was revealed that he did two things to pull this off: He used the glasses to emit a low-level eye-ray that caused people to see Clark slightly different from what he actually looked like, and as Superman, he (when around people in public) very slightly vibrated constantly, so recording devices always had a bit of blur to them, even when he was standing still. Post-Crisis and definitely Post-New 52, I have no idea.

Also wouldnt people check him and discover he isnt human as a baby for the adoption?

It's dumb in certain media where there's absolutely nothing different besides the glasses (Henry Cavill, George Reeves), but when done with real dedication like Christopher Reeve, they feel like two entirely different people. Different posture, different hair, different voice, clumsy, kind of a wimp. No one would look twice at that guy in a huge busy workplace like the Daily Planet, and they sure wouldn't notice him going down the sidewalk.
