I know that there's been a number of legitimate Native-American wrestlers like The Briscoe Brothers (Jack and Jerry), Tatanka and people like that, and yet, Chief Jay Strongbow, one of the more famous "Native-American" wrestlers is actually an Italian-American.
Are there any other wrestlers who are legitimately Native-American? Also why there seems to be so few Native-American wrestlers out there in the current wrestling landscape?

Likely only a small part. You figure how many Native Americans there are, and how many of them end up getting into pro wrestling, and how many make it from there beyond bingo halls.

There was a wrestler called Kafu ,The Brazilian Beast and he was Native SouthAmerican does that count?

There was a short-lived Native American character in WCW in 1993 named Charlie Norris. He was basically a Tatanka rip-off since that's when Tatanka was at the height of his popularity. He later went on to sue WCW for discrimination. Not sure what happened to him after that.

It was funny in a way, that Chief Jay Strongbow was a fake, but his fake "brother" Jules Strongbow was legit. Were the Youngblood’s actually native? Not directly. They are Hispanic, so there is likely some indigenous blood in them further back, but nothing in their recent genealogy. But yeah, outside that Wikipedia page, there aren't a whole lot of Native Americans that have made a name in the business. Many of the "indian" gimmicks over the years were portrayed by Hispanics, Mexicans and even Middle Easterners. And Italians, for some reason.

Some of the fakes got big. Adnan Al-kassie was successful enough as Billy White Wolf that he spent the first twenty years of his career doing that gimmick before finally reclaiming a (stereotyped) form of his own ethnicity and going by his real name again. Wrestling is weird like that. This is the business that gave the WWF five Japanese roster members in the mid-90s, and only two of them were actually Japanese. The other three were Hawaiian, Puerto Rican and Samoan.

Anyway, back on topic, there has to be more, but I'm guessing Wikipedia is just counting full blooded or a couple of generations removed from full blooded Native American.

There's no doubt a number of them spread out over time, territories and indies. There was a wrestler here in the late 90s named Choctaw Warrior and was probably legit, but he never got beyond 200-crowd indies. I think the second Bull Ramos (not the famous one) may have been Native, but not even close to confirmed.
