Original Star Wars Trilogy (Episodes 4-6). They can explore any different era, characters, species, jedi, Sith, Mandalorian etc, of content and I am fine with that. They can have new movies/shows with Luke, Han, or Leia as different characters if needed as younger versions of the character. They can re-do Sequel Trilogy to be more EU/Legendary like (although shame can't get Carrie Fisher anymore now). They can re-do Prequel Trilogy but make it more in line with the animated Clone Wars Series. MAYBE even have a "Jar Jar Big Adventures" show, and I may consider watching that sometime on Disney+. All of them I would at least be curious/very interested in watching.
However re-doing episodes 4-6 is where I draw the line as that is the "holy grail" with Star Wars content, and I would refuse to watch it or buy ANY merchandise related to it (I have action figures or some form of collection related to just about all the movies/shows up to this point).

Honestly I still feel like it warrants remaking at some point. They already threw out the existing side continuity once already and don't really see the harm with doing it again, and if they want to hit the same core story beats again sometime I think they'd be better served redoing the originals with some new spins on them than trying to just do round two of the sequel trilogy.
Might just be coming from never being that big on Star Wars to begin with but I've never really seen it as some holy grail that must be preserved at all costs and think the benefits to rebooting it outweigh staying bogged down in 50 years worth of continuity.

You should have seen that All That back in the mid-2000s had tried to do the Good Burger sketch with some other guy playing Ed. Sorry, but that guy could not live up to Kel Mitchell. It just didn't work.
I generally value an author's right over a consumer's delight. If I don't want anyone to remake my heartfelt personal movie about a lost loved one or alike, they should at least wait until I'm dead.
Honestly, remakes don't bother me as much as the recent "direct sequel to the original even though there already is a sequel but this is the REAL one" trend. At least with a remake you know it's its own thing and you don't need to open a chart to explain what order to watch it in.
Remaking the Princess Bride would be odd because it's already a commentary on fairy tales. You could follow the book's story about finding the book but you'd lose something with the grandfather reading the book to the grandson narrative.

I've only seen the first Back to the Future but honestly I think a remake could substantially improve on it if only due to how wonky the ending's pacing is. Feels like the movie just kind of drags on and on by having essentially two full climaxes in a row.
I have no faith in Square doing a hypothetical KH1 remake justice, so that.
From a gameplay perspective (because storyline-wise guarantee it'd be an utter disaster) I'm not really even sure what you'd do with a KH1 remake besides just approach it with an attitude of, "Make it more like 2."
