Piccolo and Vegeta both warrant mention. Hercule/Mr. Satan teaching Majin Buu humanity also probably counts, even if he's less a "villain" since it's hard to take his self-serving behavior that seriously.

Cobra Kai rehabbed all of Daniel’s opponents from the movies. Johnny Lawrence, Chozen Toguchi and Mike Barnes are now all solid faces. And they did it without doing the whole "the bad guys are actually the good guys and vice versa" thing, too.

Which works because Daniels heels were just dumb kids while Miyagis were old enough where they should have outgrown that shit. Except for Sato, his face turn stuck.

Would Walter White and what he did to the Nazis count eh I'd say no. He was fine with them being Nazis and all the crap Todd did when he first struck deals with them, it was mostly revenge over them stealing his money/product and wounding his pride. Also he walked in there with every intention to kill Jesse too, because he thought he was working with the Nazis to make Walt's product. It was only when he realized that they were brutalizing Jesse and he felt pity for him that he saved him instead. There are some shades of grey, of course, but based on things he's said, it was never Vince Gilligan's intention to redeem Walt.

Depending on how you look at it, Nagatoro and her friends in "Don't Toy With Me, Nagatoro" count. It really is going to depend on how put off you are by their initial harsh treatment of "Senpai", though they do become better friends to him as the series goes in a surprisingly organic way.

I know the show is old, but to prevent spoilers.
The villain of Season One of The Good Place is my favorite face turn. Because it took a lot to get him there, and when he got there, he became one of the most heartwarming parts of the show.
