Nelson Van Alden in Boardwalk Empire, although that may be because they had no idea what they were doing with him. Nonetheless, his journey was quite interesting. Michael Shannon is a master of depicting a man going mad.

Slade on Arrow.
Goes from being Olivers friend while they were on Lian Yu
To then killing his mother in front of him
Then tries to kill He and Thea when they return to Lian Yu
Then becomes vital to helping Oliver get back his son and ending Adrian Chase and then Oliver in return helps him find his son.
Idk how you get redeemed any stronger than going from killing the main characters mother in front of him to working side by side in getting their individual sons back , like Slade said Oliver should have killed him a long time ago for killing his mother.

Another good face turn is Carver from the Wire. Starts out as a somewhat corrupt cop along with his buddy Herc (stealing drug money evidence, police brutality, some racist things etc) but listens to the words of his CO Colvin and eventually matures and becomes not just a respectful officer but man who wants to help the youth of the Baltimore streets and help them not fall into a life of crime

My bad. Warning: Spoilers from 25 years ago lol. Eh it's all good as long as it's overall character creepiness and not just randomly happening in one episode There’s a logical progression, if nothing else. There’s even a logical progression (well, as based in the logic of a series) after going past that event horizon. Honestly, they sort of missed the boat by not fully exploring one of the setting’s most intriguing lore choices. That lore is that vampires are created by taking a human host body, purge it of the human soul, and replace said soul with a lower level demon that gets stronger over time (and some are more prone than others to rapidly gain strength, particularly those sprung from the Master’s lineage). Those demons have certain instincts but most of their inherent knowledge comes from the memories locked in the hosts’ bodies. Of course, they remember the experiences but did not actually have said experiences, so they have an askew view of those memories. In short, for most of their appearances of Buffy and Angel (there are some flashbacks), Spike isn’t really William Pratt and Angel isn’t really Liam (no surname given). They’re either the demon wearing their bodies and cursed with their memories or they’re said demons forced to relinquish control of said bodies to the human soul that had been purged from their bodies when they were made into vampires. While both Spike and Angel spent some time on the show exploring some of those aspects, the show barely scratched the surface of the possibilities that could offer.

Would Walter White and what he did to the Nazis count No way, by the end of the series he was basically a sociopathic murderer. While you occasionally sympathized with Walter he was a bad person. Same thing with sopranos. You occasionally rooted for Tony but he was a monster

Edit: just remembered one, on the Jackie Chan animated series, there was a giant sumo henchman who switched sides and started working with Jackie as the series ran.

Brad Bellick in Prison Break was a bit like Theon Greyjoy; a slow burn due to the character having to hit rock bottom first.
Wesley in Angel counts I think, he was never a villain but an antagonist due to incompetence and therefore goes through a lot of character development to become one of the main babyfaces (he has a few short-lived heel/tweener turns over the course of the show too).

Cobra Kai rehabbed all of Daniel’s opponents from the movies. Johnny Lawrence, Chozen Toguchi and Mike Barnes are now all solid faces. And they did it without doing the whole "the bad guys are actually the good guys and vice versa" thing, too. Tell that to Barney Stinson.

I haven't watched MASH since lockdown, but the three I can think of off hand are when he threatens the soldiers bullying the stuttering soldier and you find out his sister has a severe stutter, his caring after the soldier that was a concert pianist, and when he stood vigil with Hawkeye when his father was going in for an operation.
Jesus, David Ogden Stiers had more turns than Big Show.
