Gilberg.
Akeem the African Dream made to spoof Dusty Rhodes' "American Dream" persona.
Dusty's WWF vignettes as a pizza man was a shot at Jim Herd who was once a higher-up at Pizza Hut.
Ted Dibiase's man servant, Virgil was named after Dusty's real name.
Virgil being renamed to Vincent and eventually Shane when he was in WCW.
Kid Kash in the first One Night Stand event when they called him Mr. TNA "Total Nonstop Attitude".
Jim Ross mentioning that you didn't have to sit through Robin Hood to watch RAW (A shot at Nitro, where they played clips from other shows on TNN during a broadcast).

Simply Priceless is simply worthless.
As for obvious shots.... While not gimmicks, the "Four, six, or eight-sided ring" comment from Kurt Angle, the DX "they're probably jerking the curtain somewhere else" thing, and Matt Striker's "Instantly classic" bit when Christian returned all come to mind.

On a Raw in the summer of 2007 they had Cena and Candice Michelle take on the IC and World Tag Team Champions as a rib on TNA's Victory Road main event (which had the TNA and X champs taking on the World Tag champs).
Jim Cornette's ring name of James E. Cornette was a direct reference to legendary promoter James E. Barnett.
(Ironically, Jim Cornette's real middle name is Mark.)

Herd started with WCW in 1988, Rhodes debuted with WWE in 1989.

Back during the late 90's, potshots against the other guy were as natural as breathing. They mentioned the other guys by name on a weekly basis. Now since it doesn't happen so often, it gets a reaction when it happens.
For instance, a big hoopla happens whenever one of the Kliq throws up the hand signal. 10-12 years ago, they were mentioning their buddies working for the other company by name every week and it was status-quo.
WWE seemingly had a mandate to take potshots at Hogan when they could for several years. Even as a kid who watched both companies, I got the idea that WWE was pissed off at Hogan for whatever reason.
For the first while after X-Pac returned to WWE in 1998 was talking about Easy E and the nWo and wanting to get back at them. That brewed into DX's invasions of WCW.
