There was another thread about Man Mountain Rock, and it got me thinking. I remember Man Mountain Rock in the WWF, as I was watching at that time, but I didn't have cable so I only got to see WWF Challenge back then, and I never saw him wrestle on there. I've never had any reason to look him up on Youtube. I did see him wrestle as Maxx Payne in WCW, but all I've ever seen of the Man Mountain Rock character was a clip of him playing the guitar.
Another two are DJ Gabriel and Eric Escobar. I've heard people mention them on this board and I've seen pictures of them, but I have never seen either one wrestle before.
There are plenty old timers I've never seen, but those are 3 that were around while I was watching wrestling that I somehow missed.

I had to catch up on a lot of wrestling that I missed or rather, never got to see back in the late 80s-early 90s. I wasn't a regular watcher of the WWF/E until the mid 90s and I remember when every region had their own territory with their own stars and they made tons of money. They even had their own fanbases. That was how I assumed wrestling was in the territorial days. Anyways, I cannot say I have ever seen when I was younger the following wrestlers wrestle: Roddy Piper in the WWF/E, The Honky Tonk Man, Zeus, The Dicks, Simon Dean, but when he was Nova, Big Dick Dudley, and for the most part, the Dynamite Kid in the WWF/E.

Al Snow.
Stevie Ray, except for taking (no-selling) a chokeslam from The Giant.

dlg3000, you must look up Piper vs Orndorff on the Saturday Night's Main Event that Uncle Elmer got married at. Awesome brawl.

Owen Hart. my first house show ever was MSG after Wrestlemania V. Greg Valentine vs The Blue Blazer opened the show, however we showed up late so I missed it.
Brian Pillman. I was in attendance at Clash of the Champions 24 where The Horsemen beat The Hollywood Blonds for the titles. however, Pillman had an injury and didn't work that night.
Eddie Guerrero. Where the hell was he in the summer of 1997 and why wasn't he booked for Bash at the Beach?

I've been watching for a looooong time... two wrestlers I remember reading tons about in Apter mags, but never actually seeing wrestle were Eddie Gilbert, and Eric Embry.
I missed a lot of the AWA, too. Don't think it was readily available, growing up in Canada.
ETA- Yeah, ditto Escobar. I very rarely watch(ed) Smackdown, so I never saw the "Juniors", nor do I know what Palmer Cannon looks like...

I remember completely missing out on Techno Team 2000 and it seemed like the only Akeem match I ever saw was his WM 6 match with the Bossman.

I never saw Techno Team 2000 wrestle, but one of the members of that team came and spoke at my school during gym class when I was in 8th grade. Dude was a total mark for himself. He made sure to mention about 5 times that he was close friends with "Dallas Page" and that he used to be in ECW and held the TV Title. That last part really pisses me off today, because I've spent a lot of time looking over the list of ECW TV Champions and have never seen him there. He also had a title belt with him that he let us pass around and ooh and ahh over. Had to be from some crappy indy fed (remember this was 2000 or something when indy feds were generally crappy). But I digress. I also think it's hilarious that somebody else here has no idea what Palmer Cannon looks like. I've always imagined that he looks like Cyrus, but I know I'm going to be very disappointed when I look him up in a few minutes..

Outside of that match at Survivor Series 97, I haven't seen The Jackyl(Don Callis) wrestle. Though I knew he was suppose to be a wrestler, but was used more as a mouthpiece.

Remember Reno, the WCW Powerplant dude that turned up in insane, deathbed WCW?
Yeah, I had that going for him there for a while. I used to think "I want to see that dude with the Tsong Po monk braid deal wrestle. I hope he wrestles. Why can't he wrestle?"
However, I finally got my wish one time and was kind of underwhelmed. Not that he was a clunker or nothing, but I just wanted him to be so awesome and he just wasn't.
I still love the "Roll The Dice" or whatever (spinning neckbreaker from reverse ddt thingy) though.

Even though I watched Raw weekly during their stints in the company, I somehow completely missed out on TL Hopper and The Goon. I never knew about them until they were profiled on Wrestlecrap.

Reckless Youth...Growing up in the 90s the mags were always talking about this guy and how he was going to be HUGE...Sadly we know how things have turned out but I remember being so pumped waiting for him to sign with the WWF or WCW so I could see what the hype was about
