Kitchen Confidential. I was on the Bradley Cooper bandwagon long before a lot of people. His English sous-chef was hilarious as well.
Studio 60. Unfortunately Sorkin kinda went overboard with snipes at the Christian Right near the end, but I loved this show.

How has this thread gotten so far without Arrested Development? I figured it'd be in the OP. because its returning with a new series and two movies? I'm going to add another vote for Deadwood, But I can totally understand that it must have been hella costly to produce x

I would probably say "Marker," which was one of the earlier UPN shows that got cancelled along with the others whose name was not "Star Trek Voyager." It was a decent show with an interesting premise.

"One on One" should not have been cancelled either. It had a cliffhanger ending, too. I really wasn't too fond of the last season, but still.

The Cape...I was really enjoying that show and then out of the blue they just cancel...And the messed up part was they never even bothered to air the last episode just put it online for diehards to watch. Sorry, it's just whenever I think of The Cape, I immediately think of this. And how has no one mentioned The Wayans Bros.? That was a quality sitcom that didn't even get a last episode. {Spoiler}Also, if things go NBC's way, Community.

Wolverine And The X-Men.
I didn't like it at first, but it grew on me. A LOT. And after teasing an AoA storyline for the second season, Marvel themselves yanked the rug out from under it.

As a kid I was so mad that I tried to call my ABC affiliate to find out what the hell was going on. The receptionist got fed up with me quickly. If I remember correctly, it was replaced by a Free Willy cartoon.

Anybody remember Boomtown? NBC renewed it for a second season and then canceled it after two episodes. One of the many reasons I hate NBC, some of the others being My Name Is Earl's cancellation, the Conan debacle, and now Community.
The original Law & Order, despite its age, still got good ratings and the quality was still very high. The additions of Jeremy Sisto and Linus Roache really freshened up the show and I believe it could have gone on for years.
