Clerks the animated series is at the top of my list.

As for the other shows mentioned, Dead Like Me, Sym-Bionic Titan, Critic, My Name Is Earl- and I'll add Lone Star, which had only one (very good) episode aired. It felt more like an FX series than a Fox show, TBH.

Baby Blues (animated) My Name is Earl Quintuplets
MNIE still shocks me that it was cancelled. It's a show that pretty much everyone has heard of, and I don't think the ratings were particularly bad.

Studio 60. Unfortunately Sorkin kinda went overboard with snipes at the Christian Right near the end, but I loved this show. Definitely agree I thought Studio 60 was a good show and I don't really like Dramas. I was a fan of the cast, especially D.L. Hughley and Columbus Short.

Moesha. The last episode ends with a mystery positive pregnancy test and her brother being kidnapped. I freaking hate cliffhangers.

Angel- Need I say more? Given the After The Fall storyline continuing in the comics, it's safe to say that would've made an amazing Season 6 storyline. Couldn't agree with this one more. For me The Crow: Stairway to Heaven. Good ratings, positive critical reception, but canned due to the Polydor buyout. Brisco County Jr. was an awesome show, I miss it.

One Life to Live, As the World Turns, Guiding Light, and All My Children...I just miss those soaps. Why didn't ABC cancel General Hospital instead, if they wanted to cancel a soap so bad, ironically speaking? Get rid of those writers and some of the execs. That is what needs to be canceled.
Also: My Name is Earl Murder she Wrote (sure it lasted a long time, but it could have had another season or two, but CBS screwed up.) My Generation (sure it lasted two episodes, but it could have been a good show if it wasn't for low ratings.) Diagnosis Murder Veronica Mars Girlfriends Boston Legal Angel Half &Half

Tremors: The Series. That's not a joke answer. The show was a cheap budget that met the ratings requirements set for it by the SyFy Channel, despite the episodes being shown completely out of order and they still canned it. Over a decade ago. I still complain about this. ....you are the only other person I know that has ever heard of this show! I loved it! Hell, I even have the damn DVD set along with the 4 movies. ;D

Reaper.
Great show, great storyline, and ended with arguably the worst cliffhanger ever. I still get mad when I watch it on Netflix.

Cha$e (reality show on SciFi where a group of people have to navigate through a setting, while avoiding "hunters" which are stereotypical Men in Black) Ricky Ortiz's finest hour. Yay, somebody else remembers it. Damn you SciFi, that was a fun show. How has this thread gotten so far without Arrested Development? I figured it'd be in the OP. Most posts have focused on shows that were particularly short-lived. That's why I didn't put Eureka and Angel on my list. Angel got 5 seasons, and Eureka will have 6 seasons.

One Life to Live, As the World Turns, Guiding Light, and All My Children...I just miss those soaps. I will miss One Life to Live. I hope Vicki, Cole, Bo, and Ford live. I never liked Ford but I don't want him to go out like that. All My Children had a really disappointing final episode which ended in a cliffhanger.

Deadwood & Rome got canned for the same reason, by the same network during their hottest periods. I read a song of ice and fire, watch game of thrones and wonder if clash of kings will be all we get before production costs get deamed "too high".
