Dwayne Johnson went from Rocky Maivia to "The Rock" Rocky Maivia to just The Rock. I remember being laughed at by my cousin when I just called him The Rock once before it became his actual name.

They dropped the "Big" from Big Bossman for most of his late 90s run
Bret Hart was spelled "Brett" on graphics several times when he first started with the company, pre-Hart Foundation

The most recent offender I noticed was Goldust's autobiography.

Batista debuted as Deacon Bautista, then a few weeks later the Deacon part was dropped and he was renamed Batista.
Lance Cade debuted with his real name, then was renamed Garrison Cade, only to return to his real name when he returned with Trevor Murdoch in 2005.

I seem to recall Kane was originally Cain. I thought was The Undertaker. Some places list it as "Cain the Undertaker" others say "Kane the Undertaker". Also, Earthquake was originally "Canadian Earthquake". I'm almost certain that, during one of his early appearances, Kane's name was spelled Kain or Cain on one of the screen intros. I'm aware of the Undertaker's original name.

Jimmy Wang Yang was originally called 'Jimmy Wayne Yang,' I have him listed as such in an old event program. I guess someone in creative just thought 'Wang' sounded funnier one day and they went with that. Also without the change we wouldn't have had Moore Wang.

But with his fake accent everyone reported and swore he said Wang... so the WWE just kinda went with it I believe

Zeb Coulter to Zeb Colter. Was that ever official? I thought people just assumed it was spelt like that before it was revealed to be 'Colter'

Was Kane really billed as "Kane the Undertaker"? No, the Undertaker was billed as " Cain the Undertaker" for his first few singles matches. IIRC, I remember hearing that those were recorded prior to his Survivor Series debut, and that by the time he officially debuted, the "Cain" was already dropped.

Was Kane really billed as "Kane the Undertaker"? No, The Undertaker was announced with that name in his (I think) second televised match on Superstars. A few posts in here remind me of when Rikishi's name was spelled 'Rakakakishi' or something similar in early 2000 on SmackDown!

Could swear he was called that on WWE.com and on their Twitter until the next Raw
