The opposite topic tends to come up a lot, I suppose sitcoms have a nasty streak of unlikable characters as a whole.
For the reverse, I guess Carl from Family Matters, both before and after Urkel took center stage. Maybe Will from Fresh Prince when his ego wasn't getting the best of him, it helped that stuff would also blow up in his face a lot so he didn't feel like a "karma houdini".

Michael Scott became more and more likable for the most part as the series went on.
Jim on the other hand got kind of douchey.

Danny Tanner was a likable enough guy. Just, very strange. Then again, Full House didn't really have a lead in the classic sense, since it followed Uncle Jesse about as much, it seems like, not to mention how much of the plot focused on the girls.

Tim Taylor always meant well. He was hard to hate. He was the kind of dude you'd slap upside the head for being dumb then give him a hug 5 minutes later for being awesome. More or less a prototypical lovable oaf.
Unless your name was Al.

Lister can be his own worst enemy, but overall Red Dwarf's a model in developing a sitcom lead without making him boring, stupider, or an asshole.
Leslie Knope worked as a comedy character without making her a complete cartoon or wholly erasing her quirks.

Early Corey Mstthews was easy to empathize with. Later Corey Matthews was a p***y.

Virginia Chance from Raising Hope is great. It's nice that she's pretty comfortable with her position and makes the best of it. She's like if Roseanne wasn't unpleasant.

Bret and Jemaine from Flight of the Conchords. How can you not love a couple of Kiwi rubes adrift in a city they don't really understand? Lister can be his own worst enemy, but overall Red Dwarf's a model in developing a sitcom lead without making him boring, stupider, or an asshole. Yeah, he's a flawed guy but his heart is always in the right place, and even when he does something dickish to Rimmer, Rimmer totally deserves it. Even Rimmer, petty weasel of a man that he is, has enough character depth to him that he's likeable for the most part.

Even Rimmer, petty weasel of a man that he is, has enough character depth to him that he's likeable for the most part. The clever thing about Red Dwarf was that they took someone that would have usually been at best the wacky sidekick to the "real" protagonist (and realistically an occasional supporting character) and instead made him the main lead. Hence as opposed to becoming more over the top and having his traits exaggerated (like so many slobby characters simply becoming more disgusting over time) they had to develop him as an actual person. Moreover because of the adjustable setting they never had to regress his progress because he's "gone as far as he can go". He's a the last person alive with a hologram, evolved cat, android, and AI for company in space; there's loads of places where they can take him without being contrived.

Although I still really enjoyed Parks and Rec to the very end. But the whole, "Look how hardworking and intelligent she is" got to be a bit much.

Ralph Kramden, the big oaf meant well with his get rich quick schemes but the only reason he did them was so he and Alice wouldn't ever have to worry about money and toil their lives away.

When it comes to dubious evolution of sitcom leads, everything's on a curve anyway. Yeah they were times near the end that Knope had the briefest flashes of Suedom, but Poehler could make any material work and the show was thankfully enough of an ensemble piece that "awesome Leslie" never got close to monopolizing episodes.
