Andre The Giant comes to mind, I don't think he truly had a finish, in the video games he has an underhook suplex and elbow drop, but I doubt either were established similarly to Hogan's leg drop or Piper's sleeper.
Lots of historical wrestlers can apply, but lets keep this post 1970s.
In recent years, the only ones I can think of who aren't non-wresting managers are Enzo Amore and Rosa Mendes.

Bobby Roode? I didn't watch enough of TNA to know if one stuck or not, but I recall reading he never really wfound a move that was made "his".

Bobby Roode? I didn't watch enough of TNA to know if one stuck or not, but I recall reading he never really wfound a move that was made "his". Roode tends to change finishers when he changes characters. Team Canada era: Northern Clothesline (Clothesline to the back of the head) First Single run "Pays to be Roode": Pay Dirt (Fisherman Suplex) Beer Money: He did whatever IT factor Roode: The Roode Bomb (Looks like the AA turned Neckbreaker) Glorious Bobby Roode: The Glory Bomb (pumphandle)

Unless I am horribly misremembering Andre did use an elbow drop, the underhook suplex and sitdown splash to finish matches. According to Heenan, his finish was backing guys into the corner and farting.

Heath Later is WWE tag team champion and has no discernable finisher. It's amazing they haven't given him the Overdrive and named it the "SEE YA LATER" He actually used the Overdrive at one point. I'm pretty sure he's actually had the Smash Hit (Impaler DDT) for a long time, but it means little if he only ever hits it once every two years.

Until, I think, he got to WCW, Lance Storm didn't really have a go-to finisher and would usually steal finishers from rivals in ECW until getting into WCW and taking Terry Taylor's rolling crab, but turning it into a single-leg crab. (Which Taylor didn't even realize he did until Storm thanked him later)
Of course, some of the finishers he used to steal became some of his own, since he used Jerry Lynn's piledriver in some of his indies matches after leaving WWE, alongside his other moves.
About Andre, he did use the double underhook suplex, elbow drop, and seated senton, and even came off of the turnbuckle for the ladder in a cage match with Kamala. (I think it was second turnbuckle, but still, impresive). He also used a tombstone piledriver at least once, but that's sort of like the figure four leglock. A lot of oldschool people have used that as a match ender at least once, so in that case, it's more like a floating finisher, rather than something associated at the time with a particular person.

Heath Later is WWE tag team champion and has no discernable finisher. He's had the Zig Zag, the black guy flatliner, the reverse DDT, back suplex into a sit out facebuster, the overdrive, the snapmare driver and a slingshot corkscrew. The only one that has stuck is the Smash Hit impaler DDT.

I have no idea what Funaki's finisher was. But then you did say high profile. He used the diving headbutt, inverted tornado ddt and then crane kick as Kung Fu Naki. Bam Bam Bigelow, perhaps? I know he had the greetings from Asbury Park in ECW and WCW, but early in his run he would alter between slingshot splash, moonsault and diving headbutt. I remember him using powerslam and a million dollar dream running facebuster-kinda thingie too,
