I knew Claudio’s music sounded familiar but couldn’t put my finger on it until her turned heel and now I recognize it since they’re playing something that sounds more like the original score.
So off the top of my head
Bryan Daniel son Hunter Hearst Helmsley Walter Flair?

Shawn Michaels used Rhapsody in Blue for a brief while as his theme at the start of his solo run before switching to Sexy Boy.

In WCW not mentioned above: Dave Taylor used "Sinfonia In F (Allegro)" Lord Steven Regal used "Trumpet Voluntary" WCW Halloween Phantom used "Toccata And Fugue In D Minor (Excerpt)" Harlem Heat & Sid Vicious used "The Flying Dutchman", later used by Loch Ness Cactus Jack used "Funeral March" This obviously excludes the national anthems etc

So off the top of my head Bryan Daniel son Hunter Hearst Helmsley Walter Flair? Definitely Flair's "Also sprach Zarathustra, Op. 30 (German: Thus Spoke Zarathustra or Thus Spake Zarathustra)[1] is a tone poem by Richard Strauss, composed in 1896 and inspired by Friedrich Nietzsche's philosophical 1883–1885 novel Thus Spoke Zarathustra.[2] The composer conducted its first performance on 27 November 1896 in Frankfurt. A typical performance lasts half an hour." Also sprach Zarathustra

I think that was a Jim Johnston theme. I don't think Rhapsody in Blue really counts either as it was a Gershwin tune and he composed in the 20th century. Jesus Christ Superstar theme was for a Broadway show composed by Andrew Lloyd Webber barely 50 years ago.

The Undertaker's theme was basically Chopin's funeral march.
Timothy Thatcher currently has a classical theme.

Most of these are from personal research (so there might be not so familiar names):
Sara Del Rey used "Ride of the Valkyries", so did Yoshiaki Fujinami.
ECW's The Musketeer used "Dies Irae", so does Great Scott in the indies.
"Smart" Mark Sterling used "In the Hall of the Mountain King". No idea now though.
Johnny Saint used "Pomp and Circumstance, Op. 39: March No. 1 in D".
Oleg The Usurper used "Symphony No. 9 in E Minor, Op. 95 "From the New World": IV. Allegro con Fuoco".
Lanny Poffo used "Concerto in F Major, Presto" in Ring of Honor between 2018 and 2019.
Vinny Pacifico used "William Tell Overture" in ROH Future of Honor shows on YouTube.
Derek St. Holmes used to use "Eine kleine Nachtmusik".
Jason Dukes used "Messiah" by The Chicago Symphony Orchestra and Chorus in IWA Mid-South.
O'Shay Edwards uses "Romeo and Juliet, Op. 64 - Act 1, Scene 2: Dance of the Knights" in Enjoy Wrestling, so did former British faction The Landed Gently back in the day.
