Fozzy. They frequently get written off as Jericho's vanity project (especially, it seems, on this board), but all of their original albums have received near-universal praise in the music press, and even their first two cover albums when they were just a gimmick band had as many positive reviews as bad.

Unknown Hinson - If you watch the Squidbillies on Adult Swim, you probably know him better as the voice of Early Cuyler. His real name is Stuart Daniel Baker. Unknown Hinson is basically a white trash 'vampire' who writes the most stereotypical country songs imaginable. It's hard to describe him, to be honest. You could say he's kinda like country music's Weird Al, but he doesn't parody songs, just the genre. You could also compare him to Tony Clifton, I suppose.
His live shows are amazing. He plays for hours. It doesn't hurt that the man is an insanely good guitarist.
Another guy that doesn't get enough credit (In my opinion) is Hank III. You have to respect him for the fact that he went out of his way to make sure he didn't get 'famous' solely due to his family tree (His dad is Hank Jr and his grandfather is Hank Sr, if that wasn't already obvious). He did and does everything his way. His album 'Straight to Hell' is a modern day classic.

Blind Melon.
Besides radio stations playing No Rain as though it were a f***ing sundance, they had some great material through two albums, plus the cobbled together album Nico, which is probably my favorite of the bunch.

Blind Guardian, they are a Power Metal band from Germany that has been going strong for twenty plus years and they are all great musicians, most notable is the fact that the singer has a more barritone voice than what you'd expect from the genre.
Sample song:
Valhalla (this is a remastered version from Memories of a Time to Come, the song was originally on their second album "Follow The Blind" which, whilst a great album, suffers from terrible production).

Weezer = Pinkerton is a masterpiece, yet it was derided as a failure by the majority of those who heard it when it came out. They also have a real thread of darkness underlying their lyrics that people miss even as early as their first record - read the lyrics of 'No-One Else' without the sugary pop melody and it's a pretty nightmarish portrait of a jealous boyfriend. My pick for this thread is Dexys Midnight Runners. In the US they are basically one-hit-wonders to the extent of being a punchline, and over here I feel they've largely suffered the same fate from the generation born after their heyday because 'Come On Eileen' is all you really hear on the radio these days. Truth is, they made three masterpieces of new soul music, plus a clutch of extra singles to go with it and recently reunited (sort of) to do another new album that has great songs albeit shitty production. Kevin Rowland is one of music's precious few genuine mavericks. He does whatever the f*** he wants, and to hell with the consequences.

My Chemical Romance often get unjust hate when really, I think they're are fantastic band.
Also Corey Taylor is underrated ad a vocalist by mainstream/non metal fans. I don't like Slipknot that much but I do think he has a great voice.

If you want more Celtic folk soul my other pick off that album is 'Liars A to E.' If you want to hear some straight up Irish soul with a hint of punk, as someone said I would go with 'Geno' which was their other UK hit. If you want to hear something unlike anything else in music, find the full twelve minutes of 'This Is What She's Like'. After the weird spoken word bit at the start, it builds and builds to sheer glory. If you're curious what Dexys are up to these days then find 'Nowhere Is Home.'

I'm not sure how things are in the UK, but in the US, I don't think Oasis gets anywhere near as much love as they should. They totally broke the mold from grunge while still making great rock, alternative sounding music. The fact that they (or at least one of them...Liam?) were tools who insulted the US audience as a whole didn't help anything.

Kataklysym:
Formed in Canada by several high school friends Kataklysym are one of the most polarizing Death Metal bands around, they original a brutal tech death band who's lyrics focused on fantasy elements but after their second album Temple of Knowledge their singer at the time went crazy and left alongside their drummer, then bassist Mariuzio Iaacano took over vocal duties and took the band in a more simplified, thrash metal influenced direction.

I'll give a mention to Soul Coughing. It's not for everyone, but Ruby Vroom is one of my 20 or so favorite albums ever. About once a week "Circles" gets stuck in my damned head. And I am pretty sure I only heard it on cartoon network. Pretty sure it wasn't on the album I owned. But yeah, crazy talented.
