Everyone in The Fifth Element in my opinion. The acting is one of the main reasons I love that movie so damn much. Every character is perfectly cast and looks like they're having the time of their life playing the role.
Bruce Willis gets to be John McClane in space, Milla Jovovich gets to kick ass, Gary Oldman gets to be the slimy bad guy, etc. Even the supporting cast is great. Tommy Lister as President Lindberg is fantastic. It's a small role but he made it memorable.
Hell, even Chris Tucker is enjoyable!

Jasika Nicole on Fringe. Everyone is really good on that show, John Noble in particular, but I mention her because Astrid is a support character but she is also the one that gets you super emotional a lot of the time and part of it is due to her acting another part to writing. Also she had some of the best scenes when Astrid interacted with her double.

Also, the MCU has received much deserved recognition for their casting choices. RDJ, Ruffalo, and Evans all come to mind.

DiCaprio in Django Unchained.
The majority of his work prior to that was absolutely average to me, but QT really made him up his game so hard that he carried it over to WoWS.
But he crushed the f*** outta Calvin Candie. In a VERY rare case of Leo's performance stealing the show.

Adam Sandler in Jack & Jill I know this was a joke, but Sandler in Funny People is his career-best performance for me. Nobody else could have made that work, because nobody else commands so much joy and hate in equal measure. And Sandler's performance just nailed it PERFECTLY. Matt Damon and Robin Williams in Good Will Hunting Williams' performance in that is my favourite performance in movie history.

For me it begins and ends with Forrest Whitaker as Lt. John Kavanugh(spelling?) in The Shield.
He truly became the character that was so personally motivated by taking down Vic that you didn't see Forrest Whitaker. You were witnessing Kavanugh in the flesh with that performance.
There are other performances that are definitely worthy of mention. Alexis Denisof as Wesley in Angel, Michael Clarke Duncan as John Coffey in the Green Mile, Denzel Washington in Malcom X, Johnny Depp in Edward Scissorhands, and the list goes on.

Surprised nobody has said Bryan Cranston in Breaking Bad yet. Incredible performances there.
Also Mickey Rourke in The Wrestler.

Watching the fifth season again you could see that his heart was in the right place and that he wanted to do the right thing. Like you said, it wasn't until he went after Lem that he truly lost himself. On one hand you wanted him to succeed in his quest and on the other hand you were like "Wow, you're really going too far and making it too personal."

Samuel L Jackson however, that was possibly the best work he'd done.
