What good examples of a show/tv/film/series...etc where the creators decide to shit on their fanbase?
The WWE can be an obvious one, with Vince making booking decisions to piss off the fanbase.
Another one I can think of is Family Guy. I feel some episodes are just there to piss off the fans, such as making Brian the douchiest character possible.

Stephanie Meyer basically sabotaged Jacob Black after the second book when he became a little too popular. He suddenly becomes an asshole in book three.

Another one but isolated in one episode is The Simpsons, The Principal and The Pauper. The writer wrote it to see if he can get a reaction and it did.

From a certain interpretation, The End of Evangelion. Basically made so Hideaki Anno could respond to the avalanche of criticism, as well as outright death threats, toward the weird and fraying-plot-thread-filled ending of the Neon Genesis Evangelion series with a film that basically amounted to him saying “Fine! You wanted a f***ing ending!? Here’s your f***ing ending!!!!”
And I say this as someone who loves End of Evangelion.

How much of this thread is being spiteful, and how much is fans' feeling entitlement to something they didn't get handed to them? It goes both ways. Fans like to snowball shit in directions it was never meant to go, and creators get resentful that other people are trying to hijack their vision. Again, this is why I'll never write anything.

Robert Kirkman I feel accidentally spites his audience at times. He kills characters people love because it makes the gravity of the deaths meaningful rather than just something the readers get over by the next issue. But starting with Abraham in TWD, the characters chosen for the chopping block have felt pretty spiteful at times.

A lot of viewers continue to watch seemingly just so they can complain about every aspect of the show that isn't like the original cartoon, and the creators constantly troll them by making it seem like they're returning things to the old show only to go "lol jk nerds!" when the episode actually airs.

More like spiting the network, but when ABC demanded more Lost, the writers gave them that episode about Jack's tattoo.
Pro wrestling in general has many examples.
About 20 years ago, Game Show Network had a streak of this. alt.tv.game-shows, back when it was a legit discussion forum, did not like GSNs revival of the Gong Show, Extreme Gong (yep, nineties...),to put it lightly. The producers struck back with direct disparaging remarks on the show.
