I don’t think many of these were done to spite their fans. It’s just artists doing what they want rather than pandering.
The Evangelion thing is probably the closest you’d get, and even that is a bit iffy. Although Ano letting the movies get so far behind schedule *may* lend credence to the idea that he harbors some lingering resentment.

Some I think it is because of artist vision, such a case maybe with "How I Met Your Mother", but many creators get bitter towards their fans, the execs they answer to, sponsors, etc.. A good non real world example is Rocko's Modern Life, Wacky Deli. Ralph was forced to create a show, and tried everything to sabotage it, hence the 30 minute mayo shot. Sometimes creators can be put in a situation where they hate what they are doing, and would shit on the fans as a way of venting.

Wasn't Kick Ass mark millar telling comic fans how much he hates them? Well he succeeded because I realised in hindsight that that series pretty much turned me off comics. Rick and Morty started gaining a vocal minority fanbase of the kind of shit heads who call everything they don't like "autistic" because they can't get away with calling it "retarded" anymore. So they put in a gag that basically flat out stated Rick is autistic. That's the kind of spite I can get behind! The Simpsons made a crack on an episode last year that was a clear "f*** you" to the growing number of people calling for Apu to be removed from the show. I haven’t watched the show in forever, but well before the controversy I felt like Apu had been developed into a genuine 3 dimensional character who’s personality went well beyond “he’s Hindi and has a convenience store!” While the starting point may not have been great, it changed with the times. I don’t really see the problem. Whatever you think of the character, the biggest problem is that he is voiced by a white guy who says 'thank-you, come again' in a comedy Indian accent. Be as well-rounded as you want, but the voice is still a parody. It'd be like having one character in Friends be a minstrel but nobody minds because there was an episode about how his dad beat him or something.

Just on the producers. That’s whole different thing.

More deceit than spite but the creators of Lost assured the fans when it got popular that they had an end game, all the weirdness, connections and mysteries would be explained and it would all make sense in the end. It was around season 3 when this became evident that the writers room had been one long meltdown of "what the hell do we do about this?" the whole time. I’ve never bothered with a full episode of Lost, but everything I’ve seen of it and heard of the series makes it sound like the answer to the question, “What if Vince Russo wrote a television show?”

Can we say that all of S5 of GOT was them dropping their pants and waving their dicks at fans? Nah, I'd say that was them not knowing what to do with a lot of extra material, butchering it, and moving far enough ahead that they had to make their own plots making it more "standard TV"

"You think Sansa is done with suffering after escaping King's Landing? Nope, we're going to marry her off to Ramsay and get raped."
The only good thing about that season was Meryn Trant dying, and they had to reveal he gets off beating little girls for us to hate him even more.
