Buffy should have ended with season 5. 6 and 7 felt so unnecessary.

Guess Brittas Empire could have ended post-Fegen/Norriss, but we did get a few more good episodes. Still their ending felt final.
An argument could be made for JLU, just cause every season's finale could have wrapped up things (and indeed I believe the writers said they wrote each season like it was the last).

Burn Notice. The show was originally about a burnt spy and his friends helping average people with his spy-skills while investigating the conspiracy into who burnt him and why. This was about 95% resolved by the end of season five. They had to stretch things out about as thin as you can possibly stretch them to keep this premise going through season six (and even that required a lot of filler). Then they had season seven. They really should've called it quits with season five. i wanted MORE as i loved burn notice would easily get rid of the new hawaii 5-0 and myguyver and swat and even maybe magnum pi to get this back! YES I SAID MACBLOODYGUYVER

How I Met Your Mother ended at the right place, but it could have definitely cut the journey down.

Oz should’ve ended at season 4, as originally planned. The finale of the first half of that season would’ve been a great way to end things. The second half and beyond felt unnecessary.

More episodes of Mike running secret missions for the CIA? No, I can do without that.

I loved Chuck but the last season was a bit meh
Same for How I Met Your Mother, don't even wanna talk about THAT ending but season 9 had some craptastic stuff

Great game, but Persona 5 could have shaved off about 10 hours. My friend has been streaming it on Twitch, and a constant complaint from him at the start was all the railroading during the tutorial sections.

Twilight works as a trilogy that should have ended after Eclipse.
Fifty Shades is OK as a single novel.
Buffy should have ended after they graduated from high school.
Star Wars should have never been more than the original trilogy.
Star Trek's final chapter is basically Voyager getting home.
Terminator, Aliens and Predator didn't need more than two films each.
The Matrix didn't need sequels.

The Spider-man clone saga lasted WAY too long and should have been much shorter and simpler.
I think the Incredible Hulk tv series ran a little too long. They should have done a bit more experimenting with it, earlier, and not killed the character off at the end in a tv movie. I would have been interested to see a "smart hulk/dumb Banner" story.
Return of the Living Dead didn't need to be more than one movie.
The Walking Dead seems to be going on too long, IMO. How many more times are they going to roam around, chased by zombies, only to find a refuge run by absolute shit lords and have to escape?

I've been reading Misfile since about 2006 and been thinking it needed to just hurry up and end since... probably about 2008. It's looking a lot like it actually is going to end this year but goddamn is it overdue. Way too little story told over way too much time.
Also I really want Steven Universe to just wrap up already. It kind of has the same thing, it's not all that much story being dragged out over a very long period of time and the constant breaks are making it a lot worse. I want the show to end while I still somewhat care about it because more and more my apathy for it is growing and I've really reached the point where I don't even actually care about Homeworld by now and outright dislike the titular character because of the constant focus on Steven and how unbelievably whiny and spineless he's gotten. Really if not for still liking the other gems (and even then, Pearl's the only one of them that still seems to have any semblance of a character arc) I'd probably have just dropped it by now.
