I have absolutely nothing going on at the moment and, having not seen either before, decided to watch the first episodes of both the original Fruits Basket and the remake back-to-back just now (only previous exposure to the franchise having been reading a small bit of the manga and not being able to get into it). And... Man, just going off the first episodes the remake seems to just absolutely destroy the original. Same overall sequence of events but it feels like scenes have much more room to breathe in the remake despite both shows having largely the same events occur in the same amount of time, the art is so much better that it's insulting to the remake to even actually compare them, the emotional beats land way better, it's funnier (other than one scene I'll grant), the acting is better directed (watching the dubs so largely the same cast), remake just completely outclasses it.
And that got me to thinking about other cases where that sort of thing is the case.
No shortage of video game examples of course. Most immediate one coming to mind for me is Resident Evil 2 (original's also pretty debatable, though I find the original's horrendous English way more charming than anything in the remake personally). Corpse Party also springs to mind, guess just stemming from the horror game association. I think I'd also call every Zelda remake an improvement, though I will grant there are respects in which the 3DS Majora's Mask changed things it shouldn't have.
I guess could also get into song covers but there are so many examples there that you'd probably be better off making a separate thread for it.

Let's knock the obivious ones out:
Carpenter's the Thing Chronoberg's The Fly
I've heard mixed opinions on the recent remake of Suspiria being better as well. Although from my understanding they are two very different films.
The original Suspiria is more like a dark fairy tale where my understanding is the new suspiria gets into the hierarchy of witches and allegories of fascism.

Nothing against the original, but I think the Scorcese/DeNiro/Nolte Cape Fear is a lot better.

The Buffy tv series is infinitely better than the movie, although I'm not sure if that fits the definition. It was kind of a remake since they recast and elements from the movie made it to the tv series.
ETA: Also not sure if this fits, but the Franco Zeffirelli version of Romeo & Juliet is better than any of the earlier movie versions I've seen.

Suspiria's different enough to where I think it's going to come down to personal preference, though that probably applies to The Thing and The Fly, as well.
I guess I liked True Grit more than the original.

Check out the cast of that movie: Kristy Swanson Luke Perry David Arquette Donald Sutherland Paul Ruebens Rutger Hauer And a young Hillary Swank and Ben Affleck. That's star studded. I saw it in theaters and had the poster. Too bad Kristy is, well...how she is these days. 😕

Pokemon HeartGold and SoulSilver. Same with Fire Red and Leaf Green. They obviously fixed all the broken Gen 1 mechanics and gave us one of the best post games in the Sevii Islands

The 3DS remake of Ocarina of Time was pretty good. Majora's Mask 3DS is... mostly better, though I'll continue to complain incessantly about them changing how Zora Link swims.
I also think that Omega Ruby/Alpha Sapphire is better than Ruby/Sapphire, though whether or not it's better than Emerald is up for debate.

They're definitely shallow by modern standards but they have a lot of quality of life improvements over the old games, and the Pokemon in the overworld thing is a legitimately great idea that I'm glad is sticking around into the main series. Though I'd probably rather play FRLG than LG. Related note, I think I'd say Friends of Mineral Town is better than Back to Nature in a lot of respects. I don't know which of them I actually prefer, love them both really and FoMT does make some painful cuts (Tomato Festival and the hothouse come to mind) plus suffers from GBA sound and graphic capabilities compared to PS1 ones, but FoMT definitely has deeper mining mechanics, more of a late game, better tool upgrades, and some more fleshed out characterization.

If we're including stuff that may be characterized moreso as reboots, Like the early 2000s He-Man more than the original, and She-Ra more than the original. That said, I still like the originals for what they are, outside of the DiC era, which is just garbage.

I think the Ocean's Eleven remake is better than the original (the sequels fall off a cliff though)
