Curry. Yesterday, since my mom managed to get some coconut milk from the place that delivers groceries for us, she decided to make chicken curry, which is pretty much my favorite. Curry for lunch yesterday, then mid-afternoon toasted some bread and used the curry sauce to make a curry sandwich. And since it was the day when the bread I bought was due to expire, also had curry bread for dinner - this time chopping up the chicken to add to the toast.
One day passes. Still some curry left, and I was the only one who had it for lunch. The sauce has thickened up quite a bit, and the flavors just get even better.
This is a meal I can eat for a whole week and beyond and never get tired of. Like the spices and flavor is enjoyable enough. Depending on how much rice you have in the spoon in proportion of the amount of meat you add in changes things. And there's the potatoes and carrots for extra texture. Mashing the potato and mixing it with the rice, mixing in the curry on it is wonderful. And of course, the chicken. Different textures and flavors from the chicken parts. It's the perfect combo, all the varied tastes of curry spread out while hot and fresh rice balances it out. Curry can be made with other meats, or no meat at all, but chicken curry stands on top for me.
Basically, I just love curry. Throw in a glass of coke or any other softdrink so cold but not cold enough to be frozen and that's one hell of a great meal.
One day, I'd like to make a chicken curry that only uses chicken necks as the chicken part. Probably not something I'll ever do, since that'll probably explode my stomach from wanting to eat the whole thing in one setting with as much rice as I can.

Just following up on the curry I mentioned some posts ago. Had the last of it as a midnight snack. Sandwich again, but this time I flattened the bread before toasting and dumped the last remains of the curry on it.
I am not kidding when I say that chicken curry is something that I won't get tired of.

And since I've already look pretty crazy about chicken curry, might as well finish it up.
Just think of the chicken curry itself on the plate. Chicken, the extra chicken parts like the liver or gizzard, plus the solid vegetables like potatoes and carrots. Then you got your rice. And of course the curry, which can be soup like or thick and creamy. Of course, the rice. The chicken and vegetables are a given, but with the curry bits you can change the texture with the amount of curry you pour in your rice. Go with no curry at the start, just the chicken and vegetables and eat it with the rice. Then pour a bit of that curry with the rice. Or pour a lot that the rice almost becomes part of the curry. Different textures, different intensities of flavor.
Cook it spicy, cook it mild, go in between. It's the perfect hot meal, which can change its taste and texture with just small changes without altering the base ingredients.

Rain happens quite regularly now, and that provides a drop in temperature on a climate that feels like a damn sauna most of the time. And I enjoy that. The chill is nice.

Being British, it’s obligatory for me to be interested in the weather and complain when it’s too hot and complain when it’s too cold. As it’s hot here now, I’ll soon be wanting it to rain or cool down a bit! Speaking of cooling down, I was able to turn a potentially difficult conversation at work today into a positive experience using understanding and charm. There’s also a programme about serial killer Dennis Nielsen on TV tonight which looks good.

Munching on some buffalo chex mix I made last night. Damn I made a good batch. I used a bunch of butter, Franks, garlic power and a little worchester to season it. The convection setting on the oven achieved a masterful toast.
I did the pro move on my mix: Rice Chex, Corn Chex, Wheat Chex, bagel chips, mini club crackers (heavily underutilized flavor bombs, you should try them), cashews and mini garlic bread sticks. I've tried the rye chips with the buffalo before and while it was good, felt a little off.

Went for two long walks today (one that was an hour long, the other was two hours long). I’m trying to get back into better shape since I won’t be working the crazy hours I used to, at least for a few weeks
