The prototypical example of this has to be the middle of Twin Peaks S2, no? Where the show stops being an occult murder mystery and becomes about a remedial superwoman and a motherf***er dressed up as a Llama, shedding about ten million viewers in the process

Starts off as a cute fun show about a sexy chick that becomes a zombie who then eats the brains of victims to help solve crimes.
Turned into a weird stupid show about a city of zombies that the entire world knew about and a bunch of government conspiracies and stuff.

Sherlock - once a show about someone solving crime mysteries… later became a show about the detective dealing with personal bullshit. Sherlock solving cases. It's not difficult. That last episode was ridiculous.

The first 2 seasons of Red Dwarf were pretty strongly concerned with getting back to Earth. It would only pop up occasionally from then on. The first two were also very much British-style sitcoms. After that the show changed more to a more American style before later experimenting with dramedy.

Two Guys, a Girl and... no more pizza place. Not only that, they retitled Two Guys and A Girl, but the cast was three guys and three girls... Izombie. I originally quit midway through season 4 because of how bizarre it had gotten. I ended up rewatching the whole series earlier this year, though, and it was insane how we went from the big bad being a zombie drug dealer blackmailing rich zombies with brains to an energy drink company to a military organization to a group of anti-zombie rebels and the US government itself.

In its short run, they went away from the married couples guess survey questions (not unlike the front game of Card Sharks) and became another Barry-Enright Q&A show with a gimmicked board + Twenty-One type scoring format.

Star Trek Voyager. The whole premise was that they were alone in the Delta quadrant without Starfleet’s help or resources and also dealing with the fact the crew was made up of a mixture of Maquis and Starfleet officers which would cause tension.
This all seemed to be abandoned very quickly and became a standard plot of the week show for the most part.

Search Party on TBS/now HBO Max. I can't even explain why because it spoils Season 5, but just trust me when I say this show is completely different by season 5 and it's not better off for it.

Once Upon A Time. And I liked the S1 gimmick of "you have to figure out/see who was which character". The further they went from that and more into "the whole season is caused by a new spell and only magic can save the day, and here's some even more blatant Disney references..."

SVU started as the darker & edgier version of Law & Order. After a few seasons the show started a deep dive into batshit insane melodrama that seems to have made it exponentially more popular than it's predecessor ever was. I watched the original every air date and only watch the new seasons on reruns years later due to work but I like the last 5+ years better than the first 10+. The original episodes were pretty sick with the storylines and Meloni and Pino's characters doing the police brutality gimmick got old fast. With the newer seasons it can get a bit dramatic and very much tends to the liberal side which is funny because the creator is not...but I like it being more towards real life stories and situations. It's definitely more towards being "ripped from the headlines" the last few years. I personally like the more new actors like Kellie Giddish and Peter Scanavino than Mariska. Ice T I like because he's not forced down our throats like Mariska. It's a cast show, not the Marsika Hargitay show but most episodes I see they are always putting her in the mix of the situations. The original series was so different from the first year to the last few, it was like it wasn't the same show. After 10 or more years it almost existed simply to break the record for longest show. I do think SVU has far surpassed the original so the actors and writers should be proud of that.

Might be misremembering it but Family Matters went from an ensemble cast family themed show spotlighting Urkel to Zany: The Urkel Show. Basically. It wasn't necessarily a bad thing, though. Urkel was overplayed, but he was still a unique gimmick. Without it, it's mostly just Carl Winslow doing a Jackie Gleason impression. I guess it'd be interesting to see how it'd have evolved without the show leaning so heavily on Steve, though.
