I mostly subscribe to true crime stuff, but have subscribed to the odd commentary/reaction or other channel too.
What made me unsubscribe most recently was a video littered with facts I could immediately debunk without having to do any research. Also, bad sourcing, like when they use an out of context Joe Rogan clip as the only source to back up hard science facts.

Most times it's either when who I'm subbed to stops talking about what I'm interested in and talk about stuff that I'm being told to care about with very weak arguments supporting it and even starting using fear tactics to get their point across ie "WE HAVE TO DO SOMETHING ABOUT THIS NOW!". I hate it when someone who makes comedy content tries to be the voice of reason for a serous topic because more times than not, I always disagree with it. There's a few examples but I don't want to turn this thread getting derailed into "This guy sucks."
Another is when someone is clearly trying to make content for the algorithm and make a quick buck rather than making good content.
Last, I'd say when it gets political. I'm very apolitical and try to stay away from that stuff. Not that I don't care, I just rather be watching stuff that makes me happy than upset.

I unsubscribed from Channel Awesome after the "Change the Channel" controversies.
I unsubscribed from Brad Jones/The Cinema Snob's channel ("Stoned Gremlin Productions"?) after he started blaming Allison Pregler for getting swatted and claiming she intentionally disrupted his father-in-law's funeral.
I used to subscribe to a channel called MostAmazingTop10, a site that would put out videos of top ten lists on various supernatural or paranormal or just plain weird topics. I don't really believe most of that stuff, but I find the stories interesting. Plus I really liked their main presenter at the time, Rebecca Felgate. When Rebecca left I decided to stick around, but after awhile the lists just started becoming really repetitive (seriously guys, how many times can you talk about "The Man from Taured"?) which caused me to lose interest in them. I tapped out and unsubscribed when they tried to pass off a joke comment from 2016 Ghostbusters as a legitimate paranormal event.

I don’t subscribe to many channels, and it’s usually just a matter of either I’m no longer interested in their content or they stop producing content. That’s about it

The need for YouTubers to pump out content leads to some serious REACHING especially if their work dabbles into the paranormal space at all. One channel I subscribe to, Nick Crowley, is certainly guilty of this. Fortunately, it looks like he’s more guilty of it in his older videos and rather than worsening, he has grown as a YouTuber. In general I’m not very interested in paranormal stuff these days and mostly prefer when he covers true crime/other dark topics, particularly those I’m unfamiliar with. As long as he keeps providing that content and doesn’t fall into old habits I’ll probably stay subscribed.

Yeah, when I see that they have no inspiration anymore and are just putting out content because they have to have a weekly upload.
In fact, when I hear, "weekly uploads" I know there's gonna be some real reaching for topics in the near future.

Drama designed to extract money from viewers. When Top Hat Gaming man/Lady decade decided the best way to respond to a DMCA complaint was to cry to the viewers for money, like it a few hundred pounds was going to destroy their family it put me off either of them. They're continually holidaying, travelling, posting videos of themselves with their tens of thousands of pounds worth of retrotech, rare consoles and games, repeating the same low effort content on the same basic scripts over two channels with adverts, sponsorships and patreon for both but paying a small fee, that selling one or two items from their collection would easily cover, to an independent photographer would cripple them financially. Lady Decade's emotional blackmail video and attempt to smear the person who DMCA 'd them as the villain soured a lot of people on them, former fans and peers alike. They seem to be personas non Grata in the retro youtuber community now, only popping up when the algorithm decides we need low effort street fighter content.

YouTube beefs in general I find to be annoying and avoid as much as possible. Like one channel I follow is Aba and Preach because I find some of their commentary/reaction videos funny and even agree with some of their more serious content (though some stuff I really, really am not on the same page about). But they also make a slew of content beefing with Redpill YouTubers that I tend to avoid like the plague. I mean I don’t care about those people and nearly every viewpoint of there’s is repugnant. If Aba and Preach really hated them as much as they present then they’d just ignore them and move on rather than kick each other for content, benefitting both themselves and the redpill dipshits.

Never subscribed to any channel but I've stopped watching plenty when the hosts and content started going batshit.

As someone who first started following CinemaSins when the videos had an average length of about 3-5 minutes, that unsubscribe was a long time coming. Eventually, the videos just became so long and pedantic that I didn't even want to see him beat up on the movies I genuinely disliked.

Also when they start begging for likes and subs. I don't mean a one time "please like and subscribe", but a whole section where they tell us "I quit my job to do this full-time and my wife will leave me and take the kids and dog if you don't smash that like button".

I'll mention one that isn't connected to any controversy or anything: Tooterp.
He had done a lot of good videos related to the Megaman series, like Best Music/Robot Master/Weapon/whatever Of Each Of The MegaMan Games 1-11 or etc., but he seems to be on a long streak of reaction vids to other people's speedruns for Megaman and Megaman X games. I don't really find any interest in reaction vids overall, so Tooterp was kinda just clogging up my subscription tab. I'll likely resub to him once he shakes the reaction bug and does, well, anything else really.

There was some guy who tried to 1up everyone with a TOP 15s channel, and you an bet homeboy was struggling for material after about #8 or so.

I think I unsubscribed to the AEW Youtube because they just flooded my feed in 2020. You had Dark, all the matches posted separately and then all the matches in Spanish (or maybe it was just the dark in Spanish).

#ChangeTheChannel made me finally unsubscribe from Nostalgia Critic, though I'd been bored with his work for a long time and it was more of a gentle push than anything else.

I unsubscribed from that channel for a few reasons. shitty repeated content was part of it (they started doing hours long videos of previous videos poorly spliced together featuring people who had left the channel years ago.), the rapid replacing of presenters where it seemed like they hired and fired people in less than two months but got 7 months worth of videos from them, and the biggest reason was I found out that when they fired presenters their contracts stated that they couldn't work for competitors youtube channels or make "top ten list" content for themselves or anyone else. there has been claims of shitty treatment of presenters while they work at MostAmazingTop10 and it's sister channels.
